Mikkeller and To Øl present to you - our effort to make the lightest beer in the world. What is the lightest beer in the world???
What we mean, is that Walk On Water is the beer with the lowest density. It simply weighs the least.
Brewers and beergeeks alike tend to describe beer by its density (or gravity). The specific density of a liquid is determined by its amount of dissolved matter. Normally proteins, carbohydrates, lipids and ashes are the four factors governing the density of a liquid. But for a beer it is more appropriate to describe its density by two factors; carbohydrates(sugar) and alcohol. Alcohol is much lighter than water, while carbohydrates (or sugars) in solution will raise the density of water.
When we brewed this beer the challenge was to ferment as much of the sugars from the malts as possible, without leaving any residual sugars. This is fairly easy for low ABV beer types, but is much more challenging for a 14% ABV beer - you could say the higher alcohol percentage the lighter, but then again high alcohol would lead to high amount of rest sugar and therefore the beer would be heavier.
After working on the breakdown of residual sweetness (dextrines etc.) and optimising our fermentation, we ended up with this beast of a boozy beer!
14% alcohol and no residual sugar making it a 100% attenuation fermented beer makes this the dryest and lightest beer in the world.

Bottle. Nose os esters, peach, melon, honey, alcohol. Bright orange color with lace. Flavor is orange blossom honey, alcohol, big citrus, sweetness going to very dry. Light and clean with a dry finish and doesn’t taste like 14%. Interesting, though a lot of sugar still remains in the beginning.

Bottle @ Home. Pous slightly hazy golden with a white head. Aroma of malt, fruity hops and alcohol. Flavor is malt, hints of caramel, fruity hops, citrus, booze. Medium body, average carbonation, alcoholic finish.271012

Draft. Light amber beer with a cream head. Light fruity aroma. Fruity and alcohol flavor. Medium bodied. Fruitiness lingers with alcohol. Very dry beer.

Tap @ Christian Firtal, Odense. Light hazy golden with a lasting white head. Aroma is sweet, malty, alcohol and moderate hoppy - fruity and citrus. Flavor is quite sweet and moderate bitter. Dry and moderate bitter finish with heavy alcohol. Too boozy for my liking. 171012

Bottle. A light hazy, golden body is topped by a dense, small, off-white head. It’s very sweetish on the nose, like canned fruit syrup, with peaches, some acidic hints and a phenolic note. Quite full-bodied, warming and surprisingly sweetish. Rather fruity and sweet flavor, with a nice bitterness. Peaches. Lasting warming finish with fruityness. An interesting experiment, but with a less interesting result. 121019

Pours clear golden with a white head. Aroma has notes of malt, yeast, alcohol and some vegetable. Taste is light to medium sweet and light to medium bitter with a long very warm and fruity finish. Body is medium, texture is oily, carbonation is soft.

33cl bottle thanks to Dutchdrebus @ ZZT V. Hazy yellow to orange color, small off-white head that quickly disappears. Aroma is quite fruity, lightly malty, hops, alcohol. Taste malts, alcohol, fruityness of peach, hops, slightly bitter. Full body, full carbo.

@ZZT V. Hazy yellow colour with a minimal white head. Smells lemongrass, soapy, floral. Tastes sweetish, lemongrass, floral, slightly soapy. Full body, fizzy carbo.
