(Previously labeled Blackberry Lambic). Blackberry is fermented by wild yeast and aged in oak casks for nearly a year, which creates a tart, complex beer. We then add whole blackberries, grown in Indiana, giving the beer a sweet, berry aroma that blends nicely with the tang of sour beer. The beer is bottle conditioned, which adds a zesty and refreshing carbonation. Blackberry is the perfect drink to share with friends over a plate of good cheese and fresh fruit.

(Old description) In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber’s Orchard in Starlight, Indiana. You should experience a tart, almost sour taste balanced by the aromatic and richly flavorful addition of whole blackberries - perfect to share with friends, and a platter of good cheese and fresh fruit. - Caleb Staton, Head Brewer

2007 Bottle. Clear raspberry colored body below a short, fizzy, off-white head, mostly diminishing. Great aroma of blackberry and funk of brett, wet blanket and barnyard. Hint of lemon. The flavor is lightly bitter, lightly sweet and moderatley acidic. It finishes heavily acidic with a comfortable tartness. Tastes of mold and blackberry. Light to medium body, watery texture and lively carbonation. Very comfortable. Brett yeast dominates this from beginning to end. Solid, complex and enjoyable.

750mL cap and cork bottle. The beer pours a beautiful copper, orange, reddish, color. Its a hazy brew with a head that is big at first but fades super quick. Aroma is weird, a strong honey like earthiness with a very wild and fruity aspect that is hard to describe. Maybe this is a response to the weird combination of blackberry and brett. Bottom line, fruity, earthy, soiled diaper aroma. Taste is light rhubarb (even though I never had it in my life). Basically, a tart fruity pastry. A bit of zing at the end. The second pour is all thick and murky. Really changes the color of the beer, becomes a muddy purple color and adds a thickness to the beer. There is a very light acidity at the end of the flavor. I was really surprised that this was this good, and that this batch was actually well carbonated. This is definitely the best beer I have had with blackberries.

750 ml bottle given to me by tjthresh. Pour is ruby red, with an off-white one inch with pinkish tint to it. Aroma of tart, sour, very fresh blackberries. A nice mineral, earthy element to it. After it sits a bit, the oakiness and wood are revealed. Lovely nose. Taste is a perfect mirror of the nose, featuring fresh sour, tart blackberry fruit along with a backbone of mineral earthiness. The flavor also has the oak wood from the nose. Please floral aftertaste. Palate is medium, and drying. This was a treat, thanks Tom!

Bottle shared by BBB63. Hazy orange/amber body, thin to moderate off-white head. Dusty, cobwebby aroma with light tartness and a thin backbone. Not much blackberry noted. Funky, sour body, with barnyard, cheese rind, and all the right Brettanomyces notes. The blackberry component was rather subtle and didn’t add much to this beer relative to the raspberries in one of their other lambics. Still a solid beer.
