White oak is native to North America and typically contains a higher vanillin content than its European counterpart, which has a strong influence on the flavour of whatever comes into contact with it once it's made into barrels.
Our white oak is air-dried for 24 months before before it's made into casks and then charred to create a natural barrier between the spirit and the very heavy, virgin vanilla flavour that's locked within the grain of the wood. It's only at this point that our beer would come into contact with it either as a cask or as chips in our Oakerators®.
Malt: I & G ale malt, Malted Wheat & Lager Malt
Hops: Super Styrian & Fuggle
Maturations: Over bourbon-infused oak heartwood in our Oakerators®
Finishing Touch: Infused with dried bergamot and blood orange oil to create a fragrant and refreshing finish.

Pours a clean golden colour with good carbonation and a nice creamy, off-white cap that stays quite long and gives out thick creamy lace. Fruity nose with their typical caramel base, but milder, and some nice spicy herbal hops. The vanilla oak hints do come out with time. This show more in the taste and the hops do a nice different balance. Almost minty aftertaste. Interesting.

Keg at the brewery’s Beer Kitchen, Edinburgh. Pours clear gold, thin white head. Light oak aromas, light citrus, light wheat-beer-banana thing. Taste is more oaky, more banana and light spice. Dry finish. Pleasantly surprising.

Bottle from Tesco Seaton. Golden colour, white head. Sweet and spicy nose. Full-bodied with a pleasant malty sweetness, spicy and citrusy-orangey. Good one.

Bottle from Tesco. Drunk at home. Mid-gold, clear, with little obvious carbonation. Light lemon and vanilla aroma. Taste is incredibly sweet - almost artificially so - with a plastic atringency that throws the whole balance off. The astringency dominates the finish and aftertaste, with a Nutrasweet note. I think that Innis and Gunn have produced some reasonably good beers but this isn’t one of them. Shame.

Bright clear gold beer, decent pale cream colour head. Palate is light has a good crispness. Fluffy light malts, oaky sweetness and a touch of mild vanilla. Nice crystallised orange, well balanced with orange peel bitterness. Creamy sweetness returns and then a little floral bitterness. Whispers of esters. Smooth semi dry finish brings a mildly minty coolness. Nicely done, best thing from Innis & Gunn for ages.
