Die Gerbstoffe des Speierlings nutzte man früher für die Klärung des Apfelweins, der blankere Apfelwein war dadurch auch stabiler in der Lagerung. Durch saubere Kellertechnik und viel Sorgfalt bei der Gärung sowie durch die Möglichkeiten einer Filtration ist heute der Zusatz von Speierling nicht mehr nötig, was für milderen Apfelwein, wie unser eigener, sogar wichtig sein kann.
Gleichwohl fördern wir den Erhalt der Speierling Bäume, verarbeiten die Früchte und haben dafür gesorgt, dass mehr als 1000 neue Bäume bereits gepflanzt wurden. Mit ihrem prächtigen Wuchs sind Speierling-Bäume ein lebendes Denkmal unserer Kulturlandschaft.
Rein geschmacklich ist die Bezeichnung 'Speierling' gleichbedeutend für einen durchgegorenen Apfelwein. Hier unterscheidet sich z. B. ein Speierling Apfelwein von einem schwäbischen Most oder einem Viez. Dies wird auch in den offiziellen Leitsätzen verdeutlicht, die für alle Keltereien gültig sind: Die Bezeichnung 'Speierling' ist hier ein Geschmackshinweis auf einen säurebetonten Apfelwein.

1l bottle. Unclear golden. Green apples, apple peel, lemon, apple pie, sour apple gums. Dry sourness. Light bodied, watery texture, low carbonated, dry fruity sour finish. Nice refreshing Apfelwein!

Tap @ Taplokaal Gist. Clear yellow color, short to no head. Aroma of slight sourish Granny Smith. Bit tart apples in taste, some sweetness. Bit too apply for me, could use some funk.

Fläschchen(1000ml): Pale golden, no head, mild sourish aroma of apples with a touch of sulphur and some rural aromas in the background; mild to moderate sour and sweet flavour; a slight tartness is detectable in the moderate sourish-sweetish finish. Not unpleasant, this "every-day" cider…

100cl bottle. Pours clear pale yellow colour with a small white head. Aroma of mild and sweet apples, some tart riped apples. Taste of tart apples, sweet apples, watery finish. Boring!

Sour nose, very light-golden in the glass. The cider starts tart, fruity. The mainpart is light, quite sour-tart, very refreshing and slightly astringent. In the aftertaste very light in body, dry, crisp, fruity-astringent.

Bottle, 100cl. A clear, almost golden colored cider, flat. Apples, some barnyard, a vague chicken farm smell, and apple cores in the aroma. The flavor is pretty much the same, quite straightforward apple tasting, but with some lightly funky, earthy notes in the far back. Medium body, quite dry. Not the most exciting cider I’ve had, but quite decent and easy drinkable. 111015

1 liter bottle kindly shared by Yngwie at Haandbryggeriet, RBNAG-11. Clear golden body with low carbonation and just a really thin off-white white head. Mild aroma of matured apples together with acidic sour apples. Quite light in flavor, sweet and sour apples with hint of apple cores. Medium to thin body. Quite plain, but drinkable.
