Double IPA aged in French oak Chardonnay barrels with Brett. Deep within the tortured aberrations of a monk’s mind there lay a concept of a Holy Grail of beer -- a beer oft imagined but never tasted, strived for but never achieved. It’s Belgian heritage manifested in its yeasty complexity, softened and rounded in its cooperage Français and made to sparkle like the stars first seen by his distant predecessor Dom Pérignon.
Bitter Monk Belgian Double IPA is such a beer. Redolent of citrusy hop bittering and massive malt infusion, this is a beer to ponder, to sip, and, even for a monk, to dream. Why then is the monk so bitter? What provokes that sly smile? What is he wearing under that flowing robe? A triple-fermented beer gives him three times the mystery. Remember, anything worth doing is worth over doing. Nothing exceeds like excess. Even for the cloistered.
And what rough monk, his hour come round at last, slinks slowly toward Brussels to be reborn.

Bottled. Hazy golden colour with a mediumsized foamy white head. Aroma is fruity, some almonds, mild floral and some slight citrus tones. Flavour is citrus, some bready and mild floral tones with some biscuits as well as mildbitterness too. Very refreshing beer.

(Bottle, thanks to Håkan) Hazy golden orange colour with foamy, off-white head. Fruity, spicy nose with oak wood, funky yeast, grapefruit, apricots, green grapes, hay, hints of almonds and orange peel. Fruity, tart taste with apricots, grapefruit, orange peel, oak wood, grapes, white wine, funk, barnyard and a mild citric bitterness in the finish. Almost full body, mainly dry. Fruity, tart, woody and funky. All in great balance. Lovely beer!

Cork-top bottle, 0.75l. Aroma of citrus, must, grape skin, brett and herbs. Pours clear golden color with medium sized soapy white head and average sparkling appearance. Taste starts light sweet and sour bready and ripe fruity, following is funky, vinous, resinous and peppery, mouthfeel is dry and spicy, while finish is moderate bitter. Medium body, oily texture and average carbonation in palate. Heavenly arctic bitterness...

Brown bottle, 750 ml, purchased from the SAQ - Aylmer on November 1, 2019, savoured on January 28, 2020; eye: golden with a caramel hue, slightly veiled, no effervescence, small beige foam ring, no lacing; nose: wild yeasts, fruity, musk, white wine, lemon; mouth: wild yeasts, fruity, musk, white wine, lemon, semi-dry finale in bittering hops with presence of wild yeasts, full body, rather carbonated, mildly bitter, lightly sweet, slightly grated texture; overall: nice surprise

Bottle: Poured a bright yellow color ale with a large pure white foamy head with good retention and some lacing. Aroma of funky Brett notes with some hoppy floral notes is super enjoyable. Taste is a mix of Brett notes with nice funky notes that pairs well with floral hoppy notes with a dry finish. Body is full with good level of carbonation. This is indeed a world-class Belgian style IPA saison. High level of drinkability with good level of complexity.

Pours clear blonde, no real head. Smell is full, chardonnay barrel shows, big time ! Very mild hops and brett. Taste is full, intense, wine barrels. Brett, bitter back. Not much hoparoma. Rather dry finish. OK .

Bottle shared at a tasting at Max's place. Slightly hazy yellow. Funk, fruity hops, a bit farty, lots of oak, a bit sourish, slightly sweetish, vinous, a bit of alcohol, bitter finish, medium-bodied.

Flaska från Beer Republic, årgång 2016. Ljusguldig, något disig med vit krona. Brett, citrus, stenfrukt, en snygg funkighet samtidigt som den är oerhört mjuk och len med en fin sötma. Något större i kropp med tydlig fatkaraktär och visst vinöst inslag, och igen förvånansvärt mjuk och len. Mycket gott.

Hazy yellow colour with thin head. Aroma and flavour have a lot of Brett funk. Finish is full of straw, funk and is quite sharp too.
