The Berlin oak is the first variation of our Budike, before raspberry and woodruff. Strictly speaking, a white stored in wood is even the most original form of Berlin's sour beer specialty. Because in the 16th and 17th centuries, when it was created, the wort was boiled in copper kettles, but the beer was then stored and matured in wooden vats and barrels.
We were inspired by this. Our Budike Weisse, which we brew according to the historical model with special yeasts (including Brettanomyces) and lactic acid cultures, ripens first on wood and then in the bottle. We have tried many different woods and toasting grades to find out which flavors work best with the fruity acidity. Her name already suggests it: our white is perfectly balanced by heavily toasted oak. It is all the better that this tree is also native to Berlin - true Berlin refreshment.

Trübe, extrem helle Farbe. Säuerlicher, an Sekt oder Most erinnernder Geruch. Geschmacklich geht es auch extrem sauer (Richtung Apfelessig) und fruchtig (Rhabarber und eine ordentliche Zitronendröhnung) weiter. Recht spritzig. Erfrischend. Schon sehr interessant, aber auf Dauer etwas zu sauer und (mit nur 3,5 % Alk.) auch zu wenig Power. Jetzt kapier ich auch warum es die Berliner Weiße mit Schuss gibt. Mit (nicht zu viel) süßem, aromatischem Sirup kombiniert hat man da eine echte Geschmacksexplosion. Fertig in der Flasche gemischt hab ich das aber noch nicht gefunden. Das war immer zu süß und künstlich. Da ist selber mischen angesagt.

(Bottle, 0.33 l - BB 17.09.2022, thanks VastActiv, 20210424) The beer poured pale golden and hazy. Its head was medium sized and white. Aroma had vanilla, tartness and fruitiness. Palate was medium bodied and dry with medium carbonation. Flavours were tartness, vanilla, wood, sourness, fruitiness and bitterness. Aftertaste was tart, woody and bitter.

33cl bottle. Thx Vastactiv. Poured unclear, straw color. Tartness, fliral notres, some spiciness and sweet notes as well. Pleasant, refreshing.

Bottle at Ardes residence, Helsinki. Thanks rauchbierlover! Color is cloudy light golden with small white head. Aromas and flavors: Fruits, citrus, wheat, malts, sourness...some sugary sweetness? OK.

33 cL bottle. Pours hazy yellow, white head. Aroma is citrusy to lime fruity, milky sour. Dry, sour. Milky. Juicy. LIght citrusy. Mellow and medium dry fruity. Lasting dry and fresh sour finish.

Aus der Flasche im 2020-04 getrunken. Diese Weisse von Lemke hat eine Holzfassreifung bekommen. Sie wirkt etwas ausgewogener als die anderen Weissen von Lemke. Der Säuregehalt in recht fein. Ein schönes Sommerbier.

330ml bottle [as Limited Edition No. 5: Berliner Eiche, 3.0% abv]. Hazy, green-ish, yellow-ish, golden colour with huge, collapsing, white head. Lactic, minimally smoky, woody and slightly herbal aroma, notes of woodruff, hints of oak bark, sour apple. Taste is mildly tart, sweet-ish fruity, minimally lactic, notes of yellow apple, a touch of pear, woodruff. Watery texture, minimally astringent palate, prickly carbonation. Surprisingly mild, very refreshing, nice Summer Ale.
