The Berlin oak is the first variation of our Budike, before raspberry and woodruff. Strictly speaking, a white stored in wood is even the most original form of Berlin's sour beer specialty. Because in the 16th and 17th centuries, when it was created, the wort was boiled in copper kettles, but the beer was then stored and matured in wooden vats and barrels.
We were inspired by this. Our Budike Weisse, which we brew according to the historical model with special yeasts (including Brettanomyces) and lactic acid cultures, ripens first on wood and then in the bottle. We have tried many different woods and toasting grades to find out which flavors work best with the fruity acidity. Her name already suggests it: our white is perfectly balanced by heavily toasted oak. It is all the better that this tree is also native to Berlin - true Berlin refreshment.

(Bottle at Lemke am Hackeschen Markt, Berlin, 21 July 2018) Golden colour with frothy, white head. Fruity, slightly sourish nose with citrus, unripe green grapes and white bread. Fruity, tart taste with notes of citrus, green grapes, white bread, oak wood and a mild acidity in the finish. Light body, quite dry. Tasty and refreshing, with a fairly mild acidity. Quite nice.

10.11.2018 -- 0.33l bottle from lemke in charlottenburg. pours a cloudy pale golden with a huge but quickly disappearing head. aroma of herbs, wood, hay. flavour of herbs, vanilla, oak, brut champagne. very tart and dry.
