Skyborry Pommage is a traditional style, bottle-conditioned, unfiltered medium-sweet sparkling cider. Bittersharps Stoke Red and Kingston Black, along with bittersweets Bulmer’s Norman, Chisel Jersey, and Dabinett, were blended throughout the season. Adam and Dani are big fans of Stoke Red and feel it brings great acidic quality and depth to a blend. Bulmer’s Norman is an early ripening variety, big green apples with wincing hard tannins, which sit in this blend nicely.

750ml bottle. Deep orangey gold colour, white foam head that quickly dissipates to a thin rim and aroma of apple, mucky funk, some caramel. Taste is sweet, apple, fruity, orchardy, fleshy, with some funky notes, orchardy, and bittersweet drying tannins. Medium bodied, low carbonation, medium-sweet finish. Nicely drinkable.

750ml bottle. 2015 vintage. Slightly hazy orangey gold colour, short-lived fizzy white foam head and aroma of tangy apple, mellow funk. Taste is bittersweet, tangy, tart, mellow juicy apple, oak, woody, with some leathery funk and drying tannins. Light to medium bodied, spritzy carbonation, medium dry tangy tannic finish. Very nicely drinkable keeved cider.
