Bottle conditioned sparkling dry perry (7.3%) made from own perry pears.

750ml bottle at Cider Salon, 2018. Pale yellow colour, short-lived white foam head and light pear aroma. Taste is mellow, pear, fruity with alittle funk. Medium bodied, spritzy carbonation, dry finish. Quite drinkable.

75cl bottle from Martin at Butford Organics at the start of a ’cider day’ driving around Hereford with Soph. This is the Premier Cru version of the Aurora, which I havent tried yet. Bottle fermented according to the Champagne method, similar to Olivers’ Oldfield Perry. Has bubbles on first pour, although thankfully they don’t permeate through the perry.. pours a light yellow with a very light apple skin / hay aroma. Taste is delicate, getting sweeter as it warms.. there are fleeting apple flavours, some mushy pear flesh and a touch of cremant zest before a delicate dryness on the finish. Like all Butford ciders / perrys this is great stuff and worthy of a much wider audience.
