Our tonnellerie series is the perfect showcase of what we mean when we say that we make "wildly traditional bière". Here we have taken our classic Saison Rue recipe, rich with rye malt, and allowed it to ferment spontaneously within extra large oak barrels that previously contained similarly wild beers. After enough time and plenty of wishful thinking, this brand new, earthy, complex, farmhouse ale developed into what was bottled up to enjoy. We find the rustic charm of fermenting a beer in this traditional method is mimicked in the flavor.

The first sip was a little better than the second, but it certainly isn't a bad sour. Smells good, tastes good.

Bottle, circa 2015-2016 vintage. Hazy orange-brown body, medium off-white head. Tart, vinous, cobwebby nose; earthy, with red grapeskin notes. Light body, surprisingly delicate, mostly grape and grapeskin with spices, floral notes, and cobwebby tartness. The long aging subdued the flavor but this otherwise held up very nicely. Thanks for the pour, James G!

RB backlog, CBF Vienna 11/18. Spicy, wheat, grass, pine, ground nuts. Light sweetness, tart and well balanced with a hint of bitterness. Medium bodied with natural carbonation. Quite enjoyed this one!

From bottle at CBF Wien 11/2018, shared by Sebilinz, thanks!
Orange, hazy body, with a small, yellowish head.
Aroma of barnyard, wood, citrus, dried fruits, flowers, grains.
Tastes similar, with more barrel, slight vinegar.
Medium, slick mouthfeel, with a moderate carbonation.
Finishes medium dry, wooden, a bit funky, citric, floral, with some vinegar.

Very nice. Really complex, with funky, barrel, fruity and floral notes in a good balance. Well dosed sourness, fresh to drink. Not my favourite by The Bruery, but another lovely one.
