The tripel in this classically conceived series by a new Belgian microbrewery. Initially inches thick, pillowy, egg-white, tightly plaster-like lacing head over hazy orangey-tinged peach blonde beer with some yeast dots sinking to the bottom in the end. Aroma of banana isoamylacetate, chewing gum even, green pear, soapy coriander, wodka, straw, white pepper, bread crumbs, some background DMS. Sweetish onset, banana ester and apple-, peach- and pineapple-like accents, sharp and souring (over)carbonation, very minerally; full, rounded mouthfeel, bready-doughy in maltiness and becoming a bit soapy from the coriander, with a thin layer of residual ‘white’ sugariness on top. Coriander seed spiciness grows strong in the end, supported by an earthy and bit herbal hop bitterness and light phenolic-spicy notes; the finishing stage is dominated by strong, heating, wodka-like alcohol, a tad too much so even for a tripel. Some DMS, bit too boozy and ‘overcoriandered’, so not a top notch tripel – which makes me question again why new breweries keep coming up with these worn-out 20th century standard formulas…
