Ale brewed with pine buds, sage blossoms, and arugula flowers. After the first half of this collaboration between two old friends at the Ft. Collins brewery, New Belgium blender Lauren Limbach made her way out to Blackberry Farm, in the foothills of the Smoky Mountains, for the next edition. Pilsner, Munich, and Rye malts lay the foundation, with a touch of fresh blossoms and buds the crew hand-picked at the Farm. This spicy, funky ale was then matured and bottle-conditioned with B. lambicus and our native wild yeast foeder beer.

Bottle - pours a lightly hazy orange - nose of oak, funk, marmalade, orange rind, aromatic botanical notes, honey - soft and full in the mouth - flavor is floral, lightly acidic, moderately funky - some spiciness through the middle, and tangy sour/sweet citrus fruit character - finishes with some oak and lingering funk - had this paired with a nice Piave cheese - really nice.

Bottle shared at CB. Pours a clearish copper with a full finger of off-white head that lingers. Lovely herbal, floral aromas on the the nose with some cereal grain and wet hay. As it warms up the sage comes out with some mild herbal mint like notes as well. Light lemony tartness with a refreshing quality.
