Kvass with Bread from Jester King Kitchen

In February, Head Baker Amanda Loadman baked 300 pounds of rye bread with local grain from Barton Springs Mill for the brew. Our bread dough was fermented with the same mixed culture we use to ferment our beer. We then added the bread to the mash along with Munich malt and local Pilsner malt from our friends at Blacklands Malt. We fermented the wort in stainless steel with our mixed culture of brewers yeast and native yeast and bacteria, and naturally conditioned the beer in bottles and kegs.

Brewing Kvass with bread we baked in-house was a special milestone for us, and we really hope you enjoy the results!

Kvass (batch no. 3) is 3.9% ABV, 1.001 specific gravity (0.25 Plato), 31 IBU and 4.2 pH.

25€ bottle from bierkonig ams. Not really traditional at all. Kind of a sour bready nice light bodied but full beer.

Bottle sample at a tasting at Yaron's place. Hazy orange. Oxidation, funk, fruitiness, rye bread, sour and bitterish, cardboard. Too oxidized, but still decent.

Appearance: Brown colour with a small off-white head.
Aroma: Bread, rye, malt, spices, yeast.
Body: Light to medium body, medium carbonation.
Flavour: Bread, malt, rye, yeast.

750ml bottle. Cloudy, yellow-ish golden colour with small to average, frothy, half-way lasting, minimally lacing, white head. Yeasty spicy and slightly bready, malty aroma, notes of brine, mustard seed, some tarragon, a touch of white pepper. Taste is yeasty spicy, slightly tart and tangy, diluted hints of brine, mustard seed, gherkin, a touch of tarragon, old lemon peel, lemon juice, sourdough. Light body, watery texture, prickly carbonation. Nice.

750ml bottle. Batch #3. (4.4% ABV) Pours a hazy gold with a medium, creamy, long lasting, white head that leaves curtains of lace. Aroma of bready rye malt, lemon, earth and funky yeast. Sweet flavour of bready rye malt, lime, lemon, sourdough, black pepper, funky yeast and faint salt in a dry finish. Light body with a watery texture and average carbonation. Tasty, refreshing and easy to drink. Very enjoyable.

Bottle, batch #3, March 2019. 4.4%. Color: Jazy golden, white head. Aroma: Bread, citrus, yeast. Taste: Malty, bread, pretty strong lemon and citrus, orange zest notes. Yeast. Hints of Bretty funk and rye. More rye at the finish after standing a while. Pretty dense and dry mouthfeel. Moderate body, below average carbonation. Very different from the dark and sweetish rye Kvass I know from Eastern Europea. This Jester King is definitely tasting a lot better, although I would easily call this one a Wild Ale. Whatever you call it: Quite nice, refreshing and easy drinkable.

Poured from the tap. Hazy golden yellow with white head. Light rye bread, mild brett, hint of lemon pepper.

Not my thing, but well made. Sweet, doughy, and fluffy. Kinda what I was expecting, but I had to try it, you never know. Foam party.

Dull pale, medium head. A bit of brett and a bit of rye...so yeah not kvass, but jester king rye ale. Soft body, just a touch each of rye and brett. Not bad but there’s nothing much for me to care about either.

Draught at Darby's Gastown, Vancouver; 3.9% ABV
Hazy to cloudy dark blond colour, dull. Moderate acidity, light spicy rye, touch of citrus peel. Slightly salty.
Pleasant.
