4 oz taster at Standard Market for Repeal Day. Last of 3 tasters still has the same more-than-just-a-thin-film layer of tan foam, over a brown beer that’s still letting some light through. THIS one has a smell that reminds me a bit of a Bourbon County Stout, likely because the malts are getting a bit roaster than the other two Cooper beers I just had. Still, the taste is velvety smooth, with just a hair of malt roastiness. A bit of a coffee liqueur on the edge. This has more of a bourbon barrel note, and in fact the bourbon starts to predominate further into the glass. Again, smooth as porters go, and perhaps resting in a barrel has helped mellow it, as I’ve seen happen with other porters than, um, got left in the back of a fridge for many months. Like a BCS junior, it fulfills the purpose of showing that barrel aging can bring diverse tastes.

5 oz. sample at Goose Island Clybourn on Black Friday. Darker brown color, fizzy head. Aroma of oak, light bourbon, chocolate The flavor has mild barrel aging, good body with a moderate lingering, vanilla, chocolate, raisin. 8.3 percent is not overwhelming, pleasing warming booze. Body is normal for the style. Overall, really nice for a porter!

12 ounce bottle into tulip glass, bottled on 9/11/2017. Pours crystal clear very dark brown color with a 1-2 finger dense light khaki head with good retention, that reduces to a nice cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation retaining the cap. Aromas of big milk/dark chocolate, cocoa, caramel, vanilla, toffee, brown sugar, bourbon, toasted oak, and dark/brown bread; with lighter notes of coconut, coffee, butterscotch, molasses, dark fruit, smoke, and roast/toasted earthiness. Damn nice aromas with great balance and complexity of dark/roast/bready malts, bourbon barrels, and light fruity yeast notes; with great strength. Taste of big milk/dark chocolate, cocoa, caramel, vanilla, toffee, brown sugar, bourbon, toasted oak, and dark/brown bread; with lighter notes of coconut, coffee, butterscotch, molasses, dark fruit, smoke, and roast/toasted earthiness. Light roast bitterness and bourbon/oak spiciness on the finish. Lingering notes of milk/dark chocolate, cocoa, caramel, vanilla, toffee, brown sugar, bourbon, toasted oak, dark/brown bread, coconut, butterscotch, light molasses/dark fruit, and roast/toasted earthiness on the finish for a while. Awesome complexity, robustness, and balance of dark/roast/bready malts, bourbon barrels, and light fruity yeast flavors; with a nice roasted bitter/sweet and bourbon/oak spiciness balance; with zero cloying sweetness after the finish. Light-medium carbonation and medium-full body; with a very smooth, and moderately creamy/silky mouthfeel that is awesome. Slight chalky roast, oak tannins, and dryness. Alcohol is very well hidden; zero warming alcohol or barrel booziness lingering after the finish. Overall this is an outstanding Baltic porter! All around awesome complexity, robustness, and balance of dark/roast/bready malts, bourbon barrels, and light fruity yeast flavors; very smooth and easy to drink for the ABV. Very well rounded malt complexity with perfect barrel integration. A highly enjoyable offering, and spot on style example.
