Atrial Rubicite is made from well water, barley, wheat, hops, farmhouse, native yeast from the Texas Hill Country, souring bacteria and raspberries. It’s 5.8% alcohol by volume, has a finishing gravity of 1.005 and is 3.36 pH. It is unfiltered, unpasteurized and 100% bottle conditioned.

Bottle at RBSG. Ruby red color with a small bubbly head. Aromatic with fresh raspberries, sweet and tart. Tastes rich with fresh berries and plenty of sour? a nice level of pucker. Light oak barrel influence, but this is all about the fruit and it delivers wonderful sweet and tart flavors.

Bottle. Pours a clear purple color with a small white head. Huge berry nose. The flavor is huge sour berries, jam, fresh. Really good.

Pours deep amber with a pink head. Aroma has notes of malt, cherries, blueberries, tartness, funk and citrus. Taste is light sweet and medium sour with a long dry, blueberry, cherry and light tart finish. Body is light to medium, texture is thin to oily, carbonation is soft.

Thanks James for sharing this bottle! Poured into a snifter showing translucent purple wine red with sparse white foam. The nose shows tart notes of tomatoes. The palate is medium bodied and moderately carbonated. Moderatly tart with tart notes of tomatoes and brett on the finish. The raspberry is a fickle fruit to use in a beer apparently... 9/24/2018 Tap into a taster showing moderately filtered cherry red and sparse white foam. The nose shows moderately intense notes of raspberries. The palate is medium bodied and well carbonated. Moderately intense notes of tomatoes and light raspberries on the end.

Original review text: Bottle shared. Dark ruby pour, hazy, with a thin pink head. Tons of raspberries, tart fruit, lactic sourness, sour cherries, light raw almonds. Medium body and carbonation, smooth texture and a veeeery tart finish.

Blood red with a pink head of foam that left quickly. Blend 5 from 2015 has an incredible nose that is like holding a handful of fresh juicy tart raspberries. Fairly full bodied but insanely tart and super dry. The taste is big huge raspberry, ultra tart, dry and somewhat salty. Great stuff that is mouth puckeringly delicious and can stand among the better framboos out there.

Bottle. Huge raspberry nose, seeds, great tartness, funk. Beautiful deep red color. Wonderfully tart, funky flavor with dust, some yogurt, a bit of salt. Very dry. Great beer that is less sour than a classic framboise and more dry, but would be very interesting beside a LP for example.

Blend 4 bottle drunk 6/19/16. High clarity and a deep, magenta-tinged red body with a large, well-retained, pink-tinged beige head. Tons of brett, nicely macerated raspberry and very soft wood. Classy and with no heavy lactic/acetic character. Good malt base behind it adding light honey, biscuit and cream-of-wheat character. Black pepper and vanilla from the raspberry seed complete the picture and there’s no alcohol or flaw. Very tart with fully fermented raspberry notes that still are quite juicy and have a lush vegetal greenness to them. Soft wood tannins and wheat provide a good backdrop and there’s tons of brett intricacy. Lime, hickory nut skin, minimal horseblanket and a strong minerality with black pepper and light lactic acid lingering. Quenching, very drinkable and dry with a very well-done fruit character. Blend 12, June 2022, drunk 8/17/22. Bright and enveloping raspberry, juicy and not too acidic. Incredible nose. The flavor is just rich, rich, juicy raspberry jam. Balanced as shit, as per JK. Yeah this is just nuts. Just immense, unrelenting raspberry and also brett and lactic character. Soft, wheat-heavy texture. Upping it somewhat from 4.1
