Sourdough Culture + Oak Barrel Fermentation

Our beautifully barrel aged sour beer has just been bottled and this batch is tasting incredible. its been blended from a mixture of 24 aged wine barrels and two bourbon to give it that kick of flavour. Read the story on sourdoughs creation bellow.

Beer and Bread have been showing off the magic of yeast for thousands of years, we decided to combine the two. The old and the new, contemporary ideas and historical techniques and ingredients, a very special beer that combines all these things and more.

6 months before we even had a brewery we started talking to Tom Herbert about the Hobbs House Bakery's 58 year old Sourdough yeast, and whether we could use it to ferment a beer. Tom was excited, we were excited!

After a year of trials (each trial took a really long time to develop) we decided to loosely base the beer on a Berliner Weisse style - a historical Sour beer style from Northern Germany, but with a Wild Beer slant to it. We have used the 58 year old sourdough culture and a little brettanomyces and put the beer straight into oak barrels for its primary fermentation.

Strong fizzy carbonation, loud actually, bright yellow body with a bit of fog and small bubbles. Soft lemony yeast funk aroma, hay, lambic notes. Flavour is lambic with soft lemon, simple and not too sour. Soft mouthfeel with little crispness. Not a bad sour.

Tap @ Mig & Ølsnedkeren. Nice head with good duration. Color is golden. Aroma and taste are lactose acid, fruits, citrus, malt and hops. Nice sour finish.

Tap at Valhalla (May 2019). Hazy golden body with a white head. Yoghurty aroma, lactic tartness. Simple, puckering tart taste, dry and mildly funky. Good all in all, not much bore than that. Bottled (December 2017), thanks Višnja for sharing! Poured a misty yellow body with a white head. Wild/sour classic aromas, light acidity. Hugely acidic in the taste, light touch of raspberry? Ends lean and dry. It just... dunno, sometimes this profile works, but here it didn't. Wasn't too keen on what the sourdough culture achieved. 6/3/6/2/12

Bottle. Pale colour, cloudy, almost no head. Aroma is intensive white currant. Heavy sour. Light body. Too sour and not very interesting.

Draught at BeerGeek Bar. Lightly cloudy, straw colored. AROMA- low, fermented, sour, malt. FLAVOR- quite sour, lemon, fresh lemon juice, touch of funky tones. Medium bodied.

Bottle from crafty Bottle, Lincoln. Pale straw colour with a. Thin white head. Aroma is. Citrus and yeasty. Taste light sour slight tart. Sharp refreshing body.

From a 330ml bottle on 22/8/2017. Pours a clear light golden with a small head. The nose is sharp, zesty and yeasty, with vinegar notes. The taste is tart, firmly sour, with lots more yeast and vinegar evident. Light bodied and slightly prickly carbonation. Sours are not really my thing, but some can be quite refreshing if done right. This doesn’t work for me on any level.

Bottle from beer[malade]. Yellow color with small white head. Aroma of grape, vinous, yeast, lemon. Distinct sour taste with grape, lemon, yogurt, dough. Nice.
