Sourdough Culture + Oak Barrel Fermentation
Our beautifully barrel aged sour beer has just been bottled and this batch is tasting incredible. its been blended from a mixture of 24 aged wine barrels and two bourbon to give it that kick of flavour. Read the story on sourdoughs creation bellow.
Beer and Bread have been showing off the magic of yeast for thousands of years, we decided to combine the two. The old and the new, contemporary ideas and historical techniques and ingredients, a very special beer that combines all these things and more.
6 months before we even had a brewery we started talking to Tom Herbert about the Hobbs House Bakery's 58 year old Sourdough yeast, and whether we could use it to ferment a beer. Tom was excited, we were excited!
After a year of trials (each trial took a really long time to develop) we decided to loosely base the beer on a Berliner Weisse style - a historical Sour beer style from Northern Germany, but with a Wild Beer slant to it. We have used the 58 year old sourdough culture and a little brettanomyces and put the beer straight into oak barrels for its primary fermentation.

Tap at Craft Islington. 25th July 16. Pours straw, aroma is cider, tart, astringent, taste is nasty sour, astringent, harsh, lemon, loads of sickening cider characteristics. Makes you fear for your stomach, not a good beer at all.

BOttle. Nose is lemon, white grape, hints of wine, yeast. Taste is sharp, vinous, lemon, oak, grape, barrel. There is a little breadiness in the middle, but it adds little. Affable ’me too’ Berliner.

Sample from bottle at ASKO-messe. Slightly hazy pale yellow colour, white head. Aroma of sourdough and sour milk, hints of farmhouse and lemons. Sour flavour, notes of lemons.

Trübes hell goldgelbes Bier mit einer ordentlichen weißen schaumkrone. Geruch mild säuerlich, helles kraut, getreidig. Geschmack säuerlich fruchtig, kraut, Gewürze, helles malz.

Où, Quand, Comment : Bouteille, courtoisie de MAM, dégustée le 4/15/2015.
Visuel : Couleur : dorée pâle. Apparence : légèrement voilée.
Arôme : Levures fruitées sauvages et sûres (citron), notes herbeuses et de céréales.
Goût : En entrée de bouche : Goût légèrement acide de levures sauvages fruitées (agrumes, surtout de citron, traces de pommes) et aux faibles notes épicées. Un très léger support de céréales et de pain est également perceptible avec des notes herbeuses et de bois humide.
En bouche : Corps : plutôt mince. Effervescence : moyenne. Texture : notes crémeuses. Finale : moyenne et un peu sèche, composée d’une légère acidité de levures fruitées.

That what I like. 58 letnie drozdze zrobily swoje moze i nie daly mocy alkoholu ale daly mnostwo kwaskowego smaku. Piwo jest jasne metno-mgliste z niewielka a w zasadzie minimalna piana. Pachne kwaskiem cytrynowym i limonka niedojrzala. Smak to kwasne oblicze cytryn i limonki. Lekko gryzace i szczypiace w jezyk niczym dobry wytrawny Brukselski Lambick. Super piwo lekkie i odpowiednio kwasne nie dla wszystkich ale milosnikow Gueuze zadowoli z pewnoscia. Polecam do kalmarow z cebula. Pycha

Keg tap at the Crown & Anchor, Brixton. Light gold, no head but noticeable carbonation. Lime, sour apples and mothballs on the aroma. The intense sour taste in punctuated by citrus sweetness. Glorious sour/bitter finish aided by the intensity of the carbonation which, while heavy, doesn’t intrude. Top-notch.
