Ale with currants added and aged in oak barrels.
When we made the Toronado’s 20th Anniversary Ale, we had no idea that it would turn out to be one of our favorite barrel aged beers we would ever make. With that said, we have always wanted to make a dark barrel aged beer using 100% Cabernet Sauvignon barrels but, we never were inspired. That is, until we blended five different beers to make the Toronado beer, the tobacco character from the the dark malts blended nicely with the furit character that developed in blending. So, with Concescration we set out to make a barrel beer using all Cabernet Sauvignon barrels. No, we are not saying that this is a replica of the T-rooms anniversary beer, after all, a beer like that can never be duplicated, and, there was no fruit added to that beer as there is with this one. All we are saying is that it gave us great inspiration to brew Consecration.

From tap at the brewery. Clear copper reddish brown color with off white to beige head. Malty and yeasty aroma, dusty, dark dried fruits, tart fruity, grass notesm wood, vinous. Sweet, acidic and light bitter taste. Almost medium oily body with soft carbonation.

Poured into a tulip, the appearance was a dark amber color with a quickly dissipating thin fizzy white head. No lacing.
The aroma starts off with a thin white grape/vinous overlay to some dark fruits, currants. Sly amount of dark chocolate.
The flavor yields to the tartness first. And then sharpens against a nice vinous quality coming from a dry woody edge. Dark chocolate seems a bit more scaled back. Quick vinous sweet to dry dark fruity aftertaste. No finish.
On the palate, this one sat about a light to medium on the body with an appropriate carbonation to it, medium strength without letting acidity to get too tough on the feel.
Overall, nicely done American Wild ale using wine barrel to be the sour. Thanks Paul.

Draft at the source. Amber color with an off-white head. Aroma is vinous, dark fruits and berries. Taste is vinous, dark fruits, currants, Cabernet, oak, vinegar. Quite sour. Acetic, tart finish. Very good.

Pours mahogany into a tumbler. Off-white head with little retention recedes to hug rim. Cinnamon, cherry and clove aromas. Tart with dark cherry upfront turning to pith, sour earth and cabernet before the jaw clenching, medium length finish.

375ml bottle at Brian’s (thx, Brian!). Bottled 08-Jan-2016. Pours a slightly hazy copper with no head. Sour aroma is more intense than Supplication one, brings out some sweetness, tart wine barrels, cherry notes, some balsamic and even alcohol notes. Taste is pretty the same character, quite dry. Amazing beer, but I would prefer it to have more sweetness as for an Imperial version with 10 ABV.

Rating #1000! 37.5cl bottle. Lots of white wine aroma over wooden barrel. Smooth sourness with currant flavours and some iron, but not rusty at all. Tart. Medium to light carbonation. Short intense finish, very dry. Vinous throughout, getting more intense as its warming up. Very, very pleasant.

Den Haag tasting at Maakun’s. Cloudy brown flat. Caramel brown sour grapes, Wood, walnuts, wild yeast. Fierce sour, brown sugar sweet. Smooth fizzy mineral texture medium body. Very grapes and pits,light bitter. Good brown sour. Like this!

Bottle shared, thanks to Santa bytemesis for sending this! Deep reddish brown with short lasting beige head that leaves no lacing. Bitter herbs, dried red fruits, overripe berries, peach, dried apple, sherry, balsamico, light caramel. Light sweet and sour with medium bitterness. Medium bodied with prickly carbonation. Nice, but a bit too herbal for me. Still a pleasure to try it.
