Ale with currants added and aged in oak barrels.

When we made the Toronado’s 20th Anniversary Ale, we had no idea that it would turn out to be one of our favorite barrel aged beers we would ever make. With that said, we have always wanted to make a dark barrel aged beer using 100% Cabernet Sauvignon barrels but, we never were inspired. That is, until we blended five different beers to make the Toronado beer, the tobacco character from the the dark malts blended nicely with the furit character that developed in blending. So, with Concescration we set out to make a barrel beer using all Cabernet Sauvignon barrels. No, we are not saying that this is a replica of the T-rooms anniversary beer, after all, a beer like that can never be duplicated, and, there was no fruit added to that beer as there is with this one. All we are saying is that it gave us great inspiration to brew Consecration.

Draft served in a tulip glass. Dark ruby clear. Resinous red wine and oak aroma. Great sour and tart taste and finish, Flanders style. Pricey but top shelf stuff.

0,375l bottle at home shared by me. Bottled 11.09.2017. dark brown color, small off white head. smells of banana, dried fruits, marzipan, raisins, earthy, bit medical, spices. very nice smell, rather unique. full body, soft carbonation, slick mouthfeel. tastes earthy, citric, some banana, spices, bit lactic, peppery, grassy, wood, some grape notes. finishes rather dry and medium sour with notes of white wine notes, grass and some lactic notes. rather unqiue, bit weird and rather lactic but overall very enjoyable.

Brown colour, cloudy, small head. Aroma of malt, sour, dark fruit, wine; elegant. Good body strength, nice malt base, with strong vinous character, grapes, wood, and astringency, moderately sour, light apricots, light residual sweetness.

Bottle. A- Grapes, plum, oak, vanilla, tannins. A- Dark copper color, clear liquid, tan head. T- Funky, grapes, oak, alcohol. P- Medium body, average texture, average carbonation, complex finish. O- At 1.5 years old this was good. Part of me wished we could have saved it to see how to matures. Really had that wine feel to it. Rich, complex, and tasty. Too hard to describe. A menagerie of goodness.

Taster at brewery. Dark amber with small ring of head. Soft, fruity aroma, Brett. Taste is smooth and sweet, mildly tart. Subdued, but complex. This is what sours should be. Simple and clean, approachable.
