We rely on age-old tools in the brewery despite being surrounded by high technology. As a sort of compass, we use the six pointed brewer’s star to help navigate uncharted brews. The cardinal points of water, malt, grain, yeast, hops and a brewer make the baseline. From there anything goes. Sometimes the journey is as important as the destination.
You’ll notice a slight bitterness in Compass derived from our use of rose hips accentuated by high effervescence. Drink it cold from a fluted or tulip glass. And by all means, avoid sea serpents.

Pours gold into a tulip. Bright white head with good retention recedes to hug rim. Sweet flowery yeast and resin aromas. Soft with sweet doughy yeast and summer meadow upfront turning to resin and hay in the lasting finish.

Picked up this 22oz bottle just a few days ago. Poured a pretty fizzy, clear, light golden color with a medium sized foamy white head. Aroma was notes of highly floral hops, some resin notes, pedals, and a touch of light citrus in there. Flavor had grapefruits, oranges, herbs, and floral character. I should have expected this since it is Southern Tier, and because "Imperial" is in the title, but the 9% alcohol is pretty well masked. Interesting and pretty refreshing.

22 ounce bottle. Cloudy yellow gold color topped by a big foamy white head. Robust citrus hop aroma is accented by an earthy yeastiness. Soft bitter, grainy malt flavor has notes of lemon and spice. Highly carbonated with a bitter dry finish. Complex and tasty. Highly recommended.

Bottle. Hazy golden yellow with a large white head. Citrusy-fruity hops and light yeast aroma. Bitter lemon peel/pith hops, light floral, and slightly sweet fruity-bready malt flavor. LIght body, moderate carbonation.

From a 22 oz bottle shared at home. Pours a cloudy gold with an off white head. Aroma of lemon curd. Flavors of banana, lemon and a hint of toffee. Real tasty.

Pours a cloudy yellow color with a white head. Aroma is lemon, some floral hops, and some pale maltiness. Taste is slightly bitter. This does not feel like a 9 percent beer; in fact, I have doubts that it was. Very easy to drink, with a soft mouth feel. Hoppiness present throughout. I don’t know why this is called a Belgian Ale. Should probably be ASA or something. if it is really 9%, then this was the easiest drinking beer you could have.

Bomber from Beer Run. Pours a yellow color with a slight haze. Thin tan head. Fair head retention. Aroma of pale malts, citrus and mild floral notes. The taste is citrus hops, pale malts, and a mild fruitiness. Medium bodied with a slight lingering bitterness. Interesting.

Nice beer. Tastes very hoppy if it’s a Belgian ale, but nice. Tangerine and floral nose with some perfumed malt. Pours clear blond with good head and lacing. Finishes bittersweet in good balance. Good stuff. On tap at Blue Monk.
