Deschutes Brewery and Hair of the Dog Brewing join forces to weave The Dissident and The Stoic and Fred and Adam into an artistic collage of cask-aging alchemy. Damn. Beer is fun!

Conflux No. 1 - Collage is the second release in the Deschutes Conflux Series. These beers were brewed in March of 2010. One hundred percent of these beers spent two years aging in a variety of oak barrels: Rye Whiskey, Cognac, Sherry, Pinot Noir, Bourbon, used American Oak, new American Oak and new Oregon Oak.

12 oz bottle. Pours a deep red brown with light head that dissipates quickly. Woody sour aroma reminiscent of a mild geuze but with darker fruity notes. Definite woody oaked, vinous flavor with lots of red and dark fruit (cherry and plums), vanilla, leather, and a bit of spice thrown in. Is this still a beer? I don’t know, but it’s great.

Bottle in Fonefan room Borefts 4. Thanks Ken. Clear brown colour lasting beige head. Lots of wood on aroma. Some toffee some bourbon. Thats big and hot. Pretty unsubtle. Bit big. Too much alcohol. Bit big

botle at de molen ... dark copper ... thin tan lacing ... peaty woody ... lightest smoke nose... big big alcohol... im tasting the mix but tasting all the big barrels ... maybe soft toffee fruit backbone

12oz bottle pours rutty reddish amber with tan head. The aroma is very interesting as it offers up brown sugar and red wine and then wafting into light notes of yeasty spices, citrus like sourness and a touch of body odor mixed with vinegar. The taste begins with red wine like notes and then it sweetens a tad with molasses before a modest level of sourness and tartness try to come to the surface. Behind those notes I get a sliver of body sweat and vinegar. Interesting brew.

This beer pours a hazy brownish-amber color with a medium thin light beige head that diminishes quickly to an outer ring. Short strings of lacing on the glass. Aroma of dark fruits, oak, and malt. Full body with a smooth texture and flavors of sherry, oak, earthy malt and vanilla. The finish is vinous with a tart oaky cherry aftertaste. After dealing with the sticker shock of a $14.99 12oz bottle I am glad this one turned out to be pretty good.

Bottle. Pours a dark amber color with a small off-white head. Has a fruity malty woody earthy weak funky aroma. Fruity malty oaky caramel vanilla flavor. Has a fruity malty woody caramel finish.

12 fl oz bottle. Pours hazy amber to brown with a small tan head. Aroma is overripe fruity and almost wineous. Smooth fruity, light citric and smooth wooden to wineous. Light phenolic and light tarish. Overripe fruity into a dry finish.

Bottle on 7/15/12: Muddy brown pour with a thin head. Nose is vinous and sour, some oak. The oak and vinous notes come forward in the taste, followed by a chocolate maltiness and sherry. The dark fruits and yeast are lively too. I think I get a fair amount of The Stoic, but also some Adam and Dissident. Maybe Fred is there too, but hiding in the background. A nice brew overall and I’d like to revisit again in a year or so. **Update, cracked open a bottle from the cellar on 12/24/13. More oaky and vinous than I remember, but the level of sherry is sublime. No edges on this at all. A healthy resemblance to Adam with a woody, leathery, malty vibe. Lovin’ this right now! Original rate of 3.8 and a new rate at 4. Scored at the average. Cellar may see another raid soon!

Aroma is sour with woody notes, cherries and hints of vinegar. Flavour is sour and tart with cherries, oaky notes and some vinegar. These oud bruin -like beers are not my thing.

Aroma is sweet and somewhat fruity with woody tones and vinegar – feels like oud bruin. Flavour has fruity tones, some vinegar, woody notes and sourish cherries. Not that aggressive or raw anymore but still not my thing.

Bottle. Murky chestnut color, thick beige head with good retention and solid lacing. Aroma of Christmas fruitcake, with mixed spices and fruit. Taste is sweet raisin bread, dates, prunes, spice. Very nice.
