Iris brings together two elements that were very present in our beers until the middle of the 20th century : the acidity produced by spontaneous fermentation and the bitterness resulting from the use of fresh hops followed by cold hopping.

9th March 2016 was the bottling date on the 75cl bottle that was shared between four of us at The Quarry Tasting on 17th July 2022. Cheers Mat for digging this out for us. Hazed amber body, wisp for a head. Sour front, back and sides: Slightly subdued though, not 'in your face' like some of Cantillon's offerings.

Pours unclear, darker amber. Medium sized, creamy white head. Scent is very full, malty, cornflakes. Bit oak. Smell is a bit 'farm' like, rough pure raw malts. Taste is full, intense tartness. Medium carbonation, very funky. Farm-like aroma's. Very enjoyable !

Bottle at Novare Res. Opaque light amber pour with an off white head. Floral aromas. Sour but somewhat sweet with caramel notes. Tart floral characteristics with a hoppy bitterness in the finish. Dry with good body and mouthfeel.

Bottle at the brewery, Brussels (2013 vintage). Deep barrel aroma. Deep brown gold. Interesting and complex flavour. Sharp ending.
