Iris brings together two elements that were very present in our beers until the middle of the 20th century : the acidity produced by spontaneous fermentation and the bitterness resulting from the use of fresh hops followed by cold hopping.

Sampled from tap at Beerlovers Bar Lambic Night 2019. Pours dark blonde, amberbrown almost. Small white head. Smell is full, heavy ( malty ), wood. Cantillon funk. Taste is full, intense woody, mild acetic acid, oaky, very malty, much heavier on the palate than a regular lambic. Nice.

Bottle. Pours hazy orange with a medium and slightly offwhite head. Aromas of some funk, some hops, slight vinegar, some barnyard and slight leathery notes. Some sour grapey notes in there aswell. Taste is pretty funky aswell, some sour grapey notes, green apples, hops are very present, slight leathery notes aswell alongside of some very barnyard-like notes. Delicious, ’simple’ sour.

Bottle, 2017, bottled Season 17/18, no bottledate on the label, only info on the cork. Color: Slightly hazy orange amber, off-white head. Aroma: Well balanced tart, sweet and bitter, wet straw, fruity, vinuous. Taste: Moderate to medium tart and bitter, moderate sweet. Pretty strong wood, oak, tannins. Grassy hop. Straw. Subtle funk en subtle fruity notes of white grapes, citrus and apple. Sour apple vinegar hints. Different from the other Cantillon beers, as stated on the label, because no wheat malt is used and because of the use of fresh hop. In my opinion this results in more bitterness, a less smooth and cleaner mouthfeel and the oak is more prominent in the taste. Very dry mouthfeel. Nice complexity and very well balanced. Another great one from Cantillon.

Bottle at Gainsbar. Darker than usual, small gold head. Aroma is interesting. Quite fruity, lots of sourness. Gaffer tape. Taste is funky, grapefruit at the front, lots of malt too, real body to it. Finish is biscuity. Nice stuff.
