Coolship Cerise’s tart, dry profile is rounded out by notes of fresh-picked cherry, pie spice, oak, and a hint of apricot. To make this beer, we fill our coolship—a large, shallow pan-like brewing vessel—with unfermented wort that gathers wild yeast as it cools. The beer then ferments and develops its flavor in oak wine barrels for up to two years before we add 100 pounds, per barrel, of locally grown Montmorency and Balaton cherries. We hope you enjoy this balanced, crisp, and complex taste of Maine.

Flaska. Vinöst, lätt kryddig, inlagda körsbär, mycket vanlij. Små fina bubblor. Lättdrucken och god men inte det mest komplexa ölet inom stilen.

Flaska från SB. Cerise klar vätska utan skum. Stor körsbärsdoft. Frisk, syrlig och stram med riktigt fin körsbärssmak. Mycket kärnor, fat, ek, kanel, omogen mandel, aprikoser. Stramt men mycket gott.

Bottle 2021 at Oliver Twist. Clear light strawberry red. Cherry, but not the artificial one, black currant, warmth. Fizzy sparkly, long, dry, tart, with an earthy red fruity funk. Nicely balanced. Not sticky.

2021 Bottle at Oliver Twist. Clear claret. Funky, cobweb, herbs, cherries on wood. Medium light, dry wooden, light charred on the palate. earthy, light lactic notes, umami, interesting.

A lightly hazed reddish burgundy ale with a thin lacing white head. In aroma, sweet cherry pulp with light acidity, light Epsom salts, light horseblanket, very nice. In mouth, a nice tart mix of ground cherry, light lactic notes, light Epsom salts, light Brett, very nice. On tap at Dacha.

Bouteille 37.5cl, bottled 01/23/2012, partagée avec la belle équipe de El Birrot, obtenue il y a bien longtemps, je ne me souviens même plus comment, peut-être lors de la Quintessence Cantillon avec Allagash?
Bière qui a franchement bien tenue ses années.
Couleur orange/rosâtre, col minimaliste blanc-rosé très fin et peu tenace.
Arôme est frais, bien fruité avec une cerise qui, malgré ses 11 ans, reste au devant, légère, fruitée et agréable. Petite note boisée, lambic funk, fruits pressés, noyau de cerise.
Palais est frais avec un caractère encore bien marqué par la cerise avec une petite note de fraicheur fleurie.pétale de rose. Petite note funk, céréales de grains, et ce volet très lambic et une acidité plaisante. Effervescence encore bien là mais subtile, reprise de suite par une fine acidité.

On tap at Uno Chicago Grill in Hamilton, New Jersey. Hazy pinkish purple color. Small creamy beige head. Fragrant citrus and berry aroma. Flavor bursts with notes of tart cherries, farmhouse funk, sour citrus and vanilla. Sour, but not overly so. Oakiness is subdued. Long tangy finish and aftertaste. Well done.

Pours bright magenta into a tulip. White head with little retention recedes to skim surface. Cherry funk aromas. Dry with sweet and sour cherry funk upfront turning to earthy oak in the lasting finish.
