2014 haben wir zum ersten Mal für Weihnachten ein besonderes Bier außerhalb der Reihe gebraut: Den Bockwurst-Bock. Es ist ein obergäriger Rauchbock, für den wir das Malz in der Metzgerei Holstiege in Münster-Roxel in die Räucherkammer gehängt haben.

Metzgermeister Bernd Holstiege hat dieselbe Räuchermethode eingesetzt wie bei seinen wunderbaren Bockwürsten: bei nicht zu hoher Temperatur heiß geräuchert mit Buchenholzscheiten und Buchenholzmehl. Er ist der Letzte, der im Münsterland noch Hofschlachtung mit eigenen Tieren macht.

Der Duft von geräucherten Münsterländer Wurstwaren trifft in diesem Bier auf den vollmundigen Malzkörper eines dunklen Starkbiers, das durch feine Röstnoten vom Roggenröstmalz abgerundet wird.

Der Bockwurst-Bock enthält keine tierischen Zutaten. Er riecht nur so. Bockwurst hat übrigens ihren Namen daher, dass sie früher der typische Begleiter zu einem kräftigen Bockbier war.

Aus der Flasche im 2015-01 getrunken. Rauch? Nein, dafür dominiert hier neben einem schönen malzigen Körper eine ungewöhnliche und wiederlich Wurstwassernote. So was will man doch nicht im Bier haben. Haben die erst ihre Bockwürste gekocht und dann mit dem Wasser das Bier hergestellt? Spannende Idee, aber nein das ist nun wirklich nicht meins.

Auburn color with a frothy head. Amazingly „meaty“ aroma full of smoked sausage. Taste is mildly bitter with just a hint of caramel sweetness. Finishes the same with lingering woodsmoke. Medium body with a mildly oily texture, trends a touch watery at the end. Interesting although under the smoke there isn’t a whole lot going on.

Bottle. Brown color. Smoked malt and fat sausage in the aroma. Full bodied. Malty sweet smoky flavor with fat sausage and caramel. Lovely bock!

Bottle: Chestnut-amber coloured, a bit unclear, big and creamy and stable off-white head; hints of smoke in the bitter-sweet malty nose; moderate sweet-bitter flavour, hardly medium bodied; increasing bitterness towards the malty/caramelly finish. Well made, unfortunately not my cup of tea…

Amber-brown color with tan head. Aroma is heavy ham smoke, thick umami. Smells like a wurst. More intense than Schlenkerla and co. Taste is meaty, smoke, a little bit fruit sweetness. Intense, but very good!

Bottle. Well, it really has the aroma of a smoked sausage. Like in a butchery. Lots of umami taste, meaty. Impressive that such a beer is possible.

Bottle shared with Erwin Van Moll and BDomue @ Van Moll Brewpub. Clear dark red to dark amber color, medium sized off-white head. Smell and taste malts, rauchmalts, quite balanced smoke, nice light bitterness. Decent body and carbonation.

(bottle, 33cl) Hazy, ruby brown colour with a firm and mid-sized off-white foamy head. Smoke-malty aroma which reminds me of smoked ham or sausages, also Schlenkerla Märzen comes to ones mind. Moderately sweet flavour, medium bodied with a soft carbonation. Smoke-laden flavour with meaty accents, far in the background hints of caramel, burnt wood and very subtle fruity notes; moderately sweet and mildly hop bitter finish with a smokey aftertaste. A likeable and very uncompromising brew. 22.I.16

Smooth roasty-smoky beginning. Intense and sticky. Great smoked beer. Dry and bitter, smoked. Fresh and easy to drink, smoky and round. Dry malt with a round smooth body in the aftertaste. Very good!

33cl bottle. Pours clear reddish brown colour with a mid-sized most good lasting beige head. Aroma of sweet roasted malt, smoke, meat. Taste of bacon, smoked malt, sweet malt, red malt, caramel, bacon in the background, good stuff!
