A farmhouse ale with roselle hibiscus. The inspiration was to make a simple beer with a subtle adjunct.
To make Mr. Mingo, we brewed a simple saison with barley and wheat from Blacklands Malt and raw Texas Hill Country water from our onsite well. We added hibiscus flowers at the end of the boil and then later dry hopped with more. In total, we used around 1 pound of hibiscus per barrel.

Reddish pinkish pour from big bottle. Bits of fink ans such snd fliral notes and tartness. Pretty good

Can/Fest. A- Mild funk. A- Peachy color, cloudy liquid, off white head. T- Funk, basement, mild belgian spice, floral. P- Light body, average texture, average carbonation, bland finish. O- Honestly a letdown for JK. Really one dimensional.

Tap. Nose is sour, floral, lightly fruity, raspberry lemon. Taste is floral, Brett, funk, leading to light sour, grain, pepper, slight spice in the short finish. Lovely balanced beer

Farmhouse funk nose, red currant, hibiscus. Clear salmon pink, medium head. Horse blanket, grape skins, hibiscus. Biscuit finish. Light body, easy carbonation. Nice farmhouse character, not fond of the hibiscus addition.

16oz can. Not that great. Dried out oxidized hibiscus...barely any cherry. Great backbone, mild sourness under control. Kind of dried out, but still well made.

Pours hazy pink into a snifter. White head with little retention recedes to skim surface. Hibiscus aromas. Soft with mild, funky brett and meadow upfront turning to dusty marshmallow before the dry, medium length bitter apple finish.
