Spontaneous fermentation activated by wild yeasts and bacteria present on the grapes, no added yeast. Fermentation and maturation in oak vats for 5/6 months. Ageing in barrels from the Cognac region for a further 12 months. Refermentation in bottle.

Backlog (thanks Susanne & Marianne). Hazy reddish amber colour with a tiny off-white head. Aroma is acidic, some funky, mild wooden, fruity and berryish tones along with some vinegar to it. Flavour is funky, some tart fruits, mild wood and a bit acidity to it as well. Quite acidic, but not overly so. Somewhere between a funky sour ale and Oud Bruin.

Draught Be.Re, 5/13/24. Clear chestnut-auburn. Small, white head at feeble cover. Typical LoverBeer. Malty, balsamic, acetic notes with plentiful cherry and oaky vanilla. This one isn't aggressive/unbalanced/boozey. Big cherry, tartness, with more Brett than usual. Woody and chewy, with good attenuation and moderate, not biting, acetic character. Great vanilla, wood, malt and bright fruit lingering.

7-3-7-4-14 Bottle, vintage 2017, #pbco02-0819. Pours hazy red, with almost no head. Aroma is tart, vinous notes of grapes, berries and floral bretty notes, as well as hay, light funky notes of leather. Medium body, with soft carbonation. Flavour is acidic fruity notes of grapes, plums and sour candy, as well as floral brett, funky notes and wooden notes.

Bottle sample at a tasting at Lior D's place. Thanks zvikar. Cloudy amber. Vinegar, funk, acetone, cobwebs, oak, fruitiness, sour and somewhat acidic with a sweetish note. Very good.

2016 vintage. Ruby red pour, pink foam. not that much of it. Tart cherry nose, lightly funk and bit of acidic vinegar. that comes out also in taste, tart vinegar, light and funky. Good body, acidic, cherry pith. Nom-nom.

Bottle. Riserva Bergnac, brewed in 2016. Color: Slightly hazy dark ocher red, very thin white head. Aroma: Sour-ish, vinuous, fruity. Taste: Vinuous, moderate sour, just slightly tart. Red berries, cherries, hints of grapes. Funk, barrel wood. Dry-ish mouthfeel. Long lasting finish. Medium body, below average carbonation. Complex and very well balanced. Great.
