Youth recognizes Age with little comprehension of its form, while Age gains a focus on Youth that brings about a quiet lament. There is a soft sadness in recognizing hard earned wisdoms that cannot be gifted to the younger versions of ourselves. Youth and Age prove to be mutually exclusive, and time spent is unavailable for access. Well... unless you're a time traveler or a beer blender.

Our friend Yvan de Baets of Brasserie De la Sebben first introduced us to the practice of Bière de Coupafe. While it historically took many forms, we were inspired by the practice of “cutting” aged beer with young beer. In this case, we “cut” our blended Jester King SPON with young farmhouse ale. Unfiltered, unpasteurized, and 100% naturally conditioned.

From tap at Other Half, New York. Fruity aroma with oak, barnyard funk, tart fruits, some citrus, hay, soft grain, notes of grape. Flavour is tart, lightly sweet nuances, light dry finish. More funky goodness from Jester King.

On tap at the brewery pours out golden topped with a small fizzy head. Nose is great big sour tart notes some citrus and a nice barrel. Taste is more of the nice sour tartness some citrus and fruit barrel.

Slight haze, pale amber, thin head. Tart, some acetone, woody, this one is odd. More phenolic than I would have expected. Decent but slightly off.

Draft, half pint. @Tilt, Birmingham (UK). 18/02/2023 [#5.918 Global - #901 United States of America - #8 Jester King Brewery] Clear golden pour with a lacing white head. Aroma: wild yeast, wine barrels and tart. Taste: tart and wild yeast. Puckering aftertaste. Well balanced and crushable. Next one please!

Keg at Tilt, Bingohame, 18/02/23. Clear golden to copper with an off white head that thins to a swirl. Nose is dusty oak, funk, herb, pencil shavings, bretted notes, green berry must, lemon rind. Taste comprises damp oak, funk, brett, lemon rind, straw, herb, dusty fruit esters, hedgerow. Medium bodied, fine carbonation, semi drying close with a light acidic rip. Decent well balanced sour.

Tap at tilt. A clear golden orange coloured pour with a a small off white head. Aroma is prickly pickle salt, sour lacto. Grass, cucumber. Flavour is composed of dry earthy grains, straw grass, onion, pickle. Palate is tangy, little oxidised, fine carbonation.

Bottle, 2019 edition (I don't know whether more vintages exist), from Bierbrigadier Nijmegen. Hazy golden, white head. Aroma: Brett funk, fruity citrus notes, light tartness. Taste: A lot of farmhouse Brett funk, malty, citrus notes (lime, orange), apricot notes, wood, grainy hints. Medium body, just below average carbonation. Long lasting dry-ish Bretty finish. Light to moderate tartness, very light sweetness. Nice complexity, another great beer from one of my most favourite American breweries.

Refrigerated 75 cL green bottle poured into a glass. Clear golden with small white head. Aroma is yeasty, medium body, low carbonation, and little lacing. Taste is tart and yeast.

Bottle at share: pours good haze with white head. Aroma is funky, woody, light citrus. Taste is tangy and spicy. Big woody finish: quite complex and tasty.
