Named after the ancient Sumerian goddess of beer, this is an equally divine Belgian-style saison with a copious amount of New Zealand hops, freshly harvested Somerset apple juice and wild yeast added to the mix. However, we like to take things just that bit further (it’s the Wild way!) — once bottled the beer undergoes a secondary fermentation with champagne yeast, giving it a brisk spritziness on the tongue. Serve chilled in a champagne flute to allow the bouquet of playfully aromatic notes to be fully appreciated. Take a sip to enjoy a further cascade of striking and sensuous flavours alongside the carefree champagne-like spritziness. The long, dry finish is both refreshing and complex.

Bottle. Thanks Jay. Sharp aroma, green apples, tart. Easy drinking, but a little unexciting. Too boozy. I don't really seem to get Wild Beer.

A hazed golden ale with a thin white head. In aroma, nice fruity malt with loads of cork, light pepper, light apples, pleasant. In mouth, a nice sweet fruity malt with light pepper notes, light curacao, coriander, light mint, pleasant. Bottle at Big Deck tasting July 2019.

Tap at Craft Room. Hazy golden body, white head. Smooth aroma, apple and very noticable alcohol. Tart apple comes up front in the taste, battered by the alcohol and some dustiness before some clean malty notes pop up. Very much not my thing, interesting experiment, but too alcoholic to push my buttons.

On tap at Craft Room, Opatovina, Zagreb. Thanks Marko & Ogi for sharing. Murky golden, small to medium lasting off-white head. Aroma is banana, ripe apple, sugar, yeasty, tart fruit, light cinnamon. Light fruity flavour, alcohol well hidden. Light peppery phenolic, adds to dryness. Light to a medium body, tart, quite peppery and phenolic finish. Good balance.
