Two-year-old Lambic in which elderberry flowers have been soaked.

The character of the elderberry flowers lends this beer a very pronounced, floral taste that is nevertheless very refreshing.

Since 2008, once a year Cantillon Brewery has produced Zwanze, a special-edition beer that is completely different each time around, with Mamouche originally appearing as Zwanze 2009. This beer is completely different from anything else produced by Cantillon, and we decided to continue producing it on a regular basis. Mamouche is what the seven grandsons of the Van Roy-Cantillon family call their grandmother, Claude Cantillon. As such it is the counterpart of the Lou Pepe beers.

From bottle to tulip glass. Bottled May 28, 2020. Pours slightly hazed orange with off-white head. Aroma of meadow and dirt. Slight floral with perfume off in the distance. Flavor is more focused on wildflower. Slight fruity esters. High carbonation gives an effervescent body.

2018. Enormous thanks Stefan! Murky orange-golden. Brett, bell peppers, very mild elder. Flat bell pepper taste, bitterish, astringent. Sorry, not working. At all.

Bottle. Lightly cloudy, orangey amber. Nose is super cellary chili-like Brett funk, wow. Flavor is really bell peppery as had been pointed out round the table. I don't really get elderflower. But it's tasty, quite sour/dry, with a very complex taste.

2018, danke Stefan. Hazy golden, lowish head. Very bretty, cork, cheese, bell pepper, grape skin. Medium body, mellow chewy, tart, citrus and flower finish, very good drinkability. light vegetal retronasal.
