A true Geuze. A blend of 1, 2, and 3 year-old lambic unfiltered and unpasteurized and aged in the bottle for at least 6 months after blending. Continued fermentation in the bottle give this Geuze its famous champagne-like spritziness. The lambic that goes into it is brewed only with 60% barley malt, 40% unmalted wheat, aged hops, and water, spontaneously fermented by wild yeasts, and matured in oak casks.
3 Fonteinen Oude Geuze is a blend of one-, two-, and three-year old lambics. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution of the ecosystem in the bottle result in a distinctively complex and elegant natural beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions in the blend, etc. When cellared properly, 3 Fonteinen Oude Geuze can be aged for several decades. The aromas and flavours will evolve from notes of vibrant fresh citrus, zesty and grassy notes to a mellow, oaky, stone fruit bouquet as the lambic continues to develop with time. Lambic and Geuze are living, cultural heritage rooted in the Zenne valley! 0,75l bottle at home. Bottled 21.03.2018. yellow hazy color, small white head. smells citric, grassy, earthy, tangerins, some oak, hay, stone fruits. lovely smell. full body, soft carbonation. tastes of cereal, hay, earthy, citric, spices, light stone fruits, subtle funk, light walnuts. finishes lightly dry and lightly sour with notes of hay, stone fruits and some cereal notes. very nice one, lovely balance.

Aromes typiques de basse-cour, d’étable et de vieux cuir dominent l’olfactif avec de très légères notes de pomme. De couleur dorée et voilée elle développe une mousse moyennement petite qui persiste tout de même assez bien. Acidité bien marquée en bouche avec retour des accents de vielle ferme et d’étable se combinant bien avec la base céréalière de blé. Agréable mais j’aurais préféré une présence plus marquée de fruité. Presque unidimensionnelle dans les notes de basse-cour. O:7.18 V:3.141 G:7.289 C:3.794 G:13.692 T:35.096

Magnum, 1500 ml bday at Ambasada. (season 18 - 19) Blend No. 50 Funk, citric, juicy, barnyard, quite complex, barrel. Nice medium sourness. Very nice. One of the best blends I had. 9/5/9/4/18

Last one was definitely lemon prominent, this one's pepper orange prominent, wonders of zenne valley funk. Wonderful stuff. Nose and finish packing as always
