Oude Gueuze is an appellation controlee : its label is protected. It is also known as the champagne of beers, especially as it is only available as a limited edition. Timmermans Oude Gueuze’s special flavour derives from its time-honoured method of preparation. It is a blend of old lambic, which has been aged for three years in wooden barrels, and young lambic which ensures spontaneous fermentation in the bottle. The different lambics are carefully selected by the brewer to obtain a perfect flavour. After it has been produced, Timmermans Oude Gueuze, which is refermented for four months in the bottle, continues to improve for 20 years.
Taste-wise… Discovering the world of the Brettanomyces, the name given to the spontaneously fermenting wild yeast at the heart of the legendary lambics of the Senne Valley, is a fascinating experience. This little marvel of bitter flavour will win you over by its subtlety of taste in which lambic never means sourness. A wild and fresh aroma is combined with a completely emancipated taste from the very first sip, leaving a flavour of authenticity on the palate while maintaining all the mystery of the Brussels gueuzes.

375ml corked and caged bottle, brewed in 2014 and bottled in 2017, ABV 6.7%. All'olfatto si esprimono sentori di sour. L'intensità olfattiva è elevata e l'esistenza olfattiva è sufficiente. Il mantello birroso superiore resiste abbastanza. La grandezza delle bollicine è medio-fine. Il liquido appare nuvoloso. Il colore è ambrato. Il corpo è strutturato. L'amaro è normale e c'è anche una componente moderatamente acidula. La forza gustativa è elevata e si prolunga in modo sufficiente. Le sensazioni boccali finali risultano di birra beverina. Il retrogusto è di decente intensità. Sul palato arrivano note di miele, frutta secca, agrumi, arancia amara, limone, lime, chiodi di garofano, frutta passita, stantio, prugna, rabarbaro, sour, acetico, zolfo, uova marce e vaniglia.

Vintage 2008/ Limited Edition Bottle. Delivered on 16.11.2011 from Beer Planet (Bruxell). Price was 8,50 EUR. Alc was 5,5%. A wiec 17-to letni lambick, trzymany 14 lat w piwnicy zabezpieczonej kamerka ukryta wsrod licznych sloikow z przetworami, trzeba jak sie ma takie skarby. Otworzone przy utworze 14 years Guns N' Roses butelka zaladowana do koszyczka Cantillona od Pani Ewy, ktora specjalnie przywiozla go dla mnie z Brukseli, nawet z koszulka. No ale wracajac. do oceny, coz wystarczy popatrzec na zdjecie zrobione podczas objadu (pieczony dorsz w smietanie z kurkami i suruweczka z czarnej rzodkwi, zakwaszona cytryna). Zakwaszona surowka to slowo klucz. To piwo jest kwasne wytrawne i po prostu GENIALNE. Nie ma co pisac wiecej. o samym smaku, aromacie nie bede pisal, pozostawiam to waszej wyobrazni. Jedej z najlepszych w swoim stylu. Master Oude Gueuze.

Bottle at home. Pours deeper golden with a foamy, thick head. Nose is loads of citruses, zesty, zappy, funky, a bit leathery. Inviting and intense. Taste is similar, perhaps less intensely. It’s zesty, funky, dry amd leathery, with a moderate bitterness. The finish is dry, citric, somewhat bitter, the body is light with an intense carbonation.

Bottle at the beer bistro. Hazy golden pour with a small. White head. Horse blanket, wet hay, minerals, lemon juice and malted wheat. Lovely. Mouth feel, good carb. Tart, funky finish, sour and complex. Lots of grains and funky wet hay, and overly ripe sour fruit. Excellent.

Hazy orange golden with a small white head. Aroma of sour lemons, citrus peel, slight funk. Flavour is similar, nice pungent sourness. I like a little more cellar funk in my Lambic, but the intense tartness makes up for it.

Мой первый пивас на London craft festival 2024. Аромат кислый, даже очень, почти лимонный. Вкус тоже кислый, много лимона и цедры и мало сена и коровника. Но все рано неплохой ламбик.

Bottle from Morrisons at 6.7%. Light cloudy bright gold with small white top. Aroma has that nice Lambic character, picking up notes of lemon, wood, onion but that doesn't really describe it. Taste of lemon and apple, quite sour, light vinegar, nice aged woody notes, some funk in the finish. Sherbet like carbonation. Very good indeed.
