650 bottle shared by Willrunforbeer, bottle date of April 2015. Thin head on a hazy, gold/ yellow color. Aroma is great! Citrus, grass and mild floral hops with just a small amount of Bretty yeast.

The balance of the character of this brew is very well done. Bretty hops and yeast is awesome. Very mild sourness near the back of the sip. The texture gets dry as I sip, hints of oak. Gosh damn, just really well done.

Poured from bottle thanks Willrunforbeer. Pours hazy yellow gold with a frothy white head. Aromas of lemon hay oak and brett. Taste is nice thin bodied mouth feel with tart lemon brett and funk. A nice brew.

Luminous pale gold liquid looks just like a Belgian wit, haziness and all. White head is small but well-retained.
High alpha hoppiness in the nose (meyer lemon, orange rind) is complemented by a more understated herbal/woody character; perhaps the interplay of the mosaic and the oak staves. Quite aromatic, and quite acidic, it allows both brett and lacto influences on the finish, with warming. Lots of lime-like fruitiness and tartness, with a healthy dose of sourness (light). No alcohol or flaws noted.
I notice two things right away, in the flavor. One, the blend of microbes, hops and oak is deliciously balanced between bitter/tart/sour. Quite complex and though the hops tend to dominate (mostly on account of the falconers flight), I didn’t find it too hoppy or acidic. Second, the malt is VERY sparse and heavily, heavily attenuated to the point where, while it certainly makes it light and drinkable, it gets very astringent and overly dry/scratchy. The oak tannin/toastiness exacerbates this and I drink the beer down faster than I would have hoped had their been some substantial/comforting maltiness to add more balance. They’ve done great things with the hops and yeast/bacteria, hopefully they can impart a little more maltiness next time (and stop brewing at Paper City soon).

Pours hazy light gold into a tulip. Bright white head with medium retention recedes to hug rim. Marshmallow and citrus aromas. Sweet caramel upfront turning quickly to sharp citrus and papaya before the medium length dry finish.

Bottle. Pours gold white head. Nose/taste of oak, light sour lemon, sour citrus, lemongrass and sour yeast - Lighter medium body.

Proletariat, NYC tap: Pours hazy golden yellow (really more yellow) with a white head. Aroma is vinegar, fruit, funk, and yeast. You can tell that it will be sour in the nose. Taste is sour and very citric, as in citric acid. Not much bitterness from the hops, but plenty of fruitiness. Very sour. Pretty good.
