Ephraim (1823-1913) was our great-great grandfather; Hill Farmstead Brewery resides several hundred feet downhill from the land that he and his father settled. In his honor, this Imperial India Pale Ale is dutifully crafted from American malted barley, buckets of American hops, our ale yeast and water from our well. It is unfiltered and double dry hopped. Intensely aromatic and saturated with resinous hop flavor, this is the ale that I dream to have shared with Ephraim.

Canned 5/23/23, drunk 6/23/23. Clear canteloupe/melon/bronze. Large, beige head, well-retained. Spicy, lightly citric, lightly floral hops show about the best of what non-Citra American hops have to offer. It's not oniony, resinous, overly piney, yet shows a playful, light, bright pine and floral character with biscuit, light bread and pepper. Clear, clean, not boozey. Good maltiness lingering on the finish. Whew, that's spicy, resinous, but also plentiful chewy, caramel-tinged white bread. Clean, but with more bread and strong, chewy, malty textures on the finish with pine, black pepper and sourdough. For an OG WC, somewhat brutish ipa, this is pretty good. Sticky malt with good sweetness, but also good attenuation helps balance all this pine and citrus peel. But at the end of the day, it's still ALOT of resin, pine, spice, citrus....From what I understand, this one needs to be drunk like no later than 10 days old, so I'll try to rerate it again next year fresh on draught.

16oz can pours out hazy golden topped with a white head. Nose is great big tropical fruit hops over ripe citrus. Taste is more of the nice tropical fruit notes over ripe citrus and a little melon.

Level 6 tasting. Cheers Big Dave for the can. Light haze on this gold beer, small pale cream colour head. Light palate, semi dry, decent fine carbonation. Light malts, a light creamy sweetness. Hops bring a mild savoury vibe with a touch of spice. Light and reasonably bright citrus, touch of citric peel. Light finish. A nuanced dipa for sure, top 50? Not even close for me.
