Ephraim (1823-1913) was our great-great grandfather; Hill Farmstead Brewery resides several hundred feet downhill from the land that he and his father settled. In his honor, this Imperial India Pale Ale is dutifully crafted from American malted barley, buckets of American hops, our ale yeast and water from our well. It is unfiltered and double dry hopped. Intensely aromatic and saturated with resinous hop flavor, this is the ale that I dream to have shared with Ephraim.

Can at the fookin hote L6 tasting, big thanks to Dave, 13/07/22. Moderately hazed orange with a decent white cap. Nose is ripe citric flesh, pine needle, grass, grapefruit, ripe melon. Taste comprises juicy citric flesh, pine resin, papaya, melon, guava, mandarin, grapefruit. Medium bodied, fine carbonation, semi drying close spliced with balanced juicy come lightly resinous hop bitterness. Solid well balanced DIPA.

16oz can pours out hazy golden topped with a white head. Nose is great big tropical fruit hops over ripe citrus. Taste is more of the nice tropical fruit notes over ripe citrus and a little melon.

Creamy white good mostly lasting head. Yellow colour. Moderate malty and heavy hoppy aroma. Heavy bitter flavor. long heavy bitter finish. Creamy palate.

Level 6 tasting. Cheers Big Dave for the can. Light haze on this gold beer, small pale cream colour head. Light palate, semi dry, decent fine carbonation. Light malts, a light creamy sweetness. Hops bring a mild savoury vibe with a touch of spice. Light and reasonably bright citrus, touch of citric peel. Light finish. A nuanced dipa for sure, top 50? Not even close for me.

12oz can from HF. Hazy golden pour, fine white foamy head. Piney, hoppy aroma, citrus peel. Taste is oranges, citrus peel, light caramel malts. Very smooth, juicy, lingering bitter finish. Sublime.

What a beer to celebrate yet another Palace win 🦅 🔴🔵 (Can big thanks to Ken) pours a hazy golden orange with a white head. Bold intense fruity with loads of vibrant citrus tropical juicy fruit, mango and tangerine, lychee and papaya, sweet malty support, balanced bitter solid resinous hops, immense.

Flowery, malty backbone, medium bodied, fruity, fairly bitter. Very good indeed.
