Stouts III Tasting. Big thanks to my Hill Farmstead pusher - Leighton. Cloudy amber beer, little white head. Palate is light and a little crisp, semi dry. Strong floral start and then a little tangerine peel and subtle wine and wood. Finishes dry and a little bitter. A curious beer but tasty.

375ml bottle thanks to GT2. Pours a hazy orange with some thick, white head. Nose is very nice, big citrus bit not like an IPA, zesty heading towards pithy, plenty of Hill Farmstead house yeast character, tangerine, quite delicate. Flavor is also delicate, sweet orange juice, tangerine, a little lime, white grape, almost a German/Riesling grapey-ness, guava. Medium bodied, dry, zesty finish. Refreshing.

Bottle thanks to Leighton, shared at Stout 3 & Freestyle tasting. It pours murky amber with a small white head. The nose is earth, soft fruit, nectarine, peach, underlying sweetness, grape, light mouldy wood, barnyard and potpourri. The taste is earth, hay, barnyard, mouldy wood, pepper, vinous, light sourness, floral, wood, cobwebs, alcohol warmth and light bitterness with a dry, lightly tart finish. Medium body and fine carbonation. Interesting flavour profile for sure, I just don’t thing it melds together that well. 3.4. Revisited with a 2017 bottle, consumed in 2021. Much better experience overall. Classic HF saison base all funked up. Nice vinous, white wine character and depth of fruit. 4.

Bottle shared at the Stouts Pt. III & Others: The Brokeback Tasting - London. Thanks to Matt for trading this to me. Pours lightly fuzzy, bright orange with a fine, creamy, pure white head. Nice bit of funk in the nose, some dried oranges, hints of brett, some poo and barnyard. Light to medium sweet flavor, some dried citrus, poop, dry wood, definite tang, melon, grapefruit, orange. Light bodied with fine to average carbonation. Light warmth to finish, some bitter orange rind, musty barnyard, more dry wood, poop, pine needles, tangerine, melon. Delicious stuff overall.

Bottle courtesy of GT2, thank you sir! Cloudy golden yellow color, thick whitebhead, solid lacing. Aroma of pineapple, mango, breadfruit, passionfruit. Taste isslightly tart tropical fruit, fresh coconut, su tle. Itter and resiny finish. Amazing.

Bottle. Pours apricot gold with white head. Nose is intense tangerine, citrus rind, grapefruit zest, Brett, farmhouse funk, apricot pit, orange peel and mango. Tons of citrus. Taste is the same with a slightly dry sour finish. White wine notes. Medium body.

Bottle. Cloudy orange with fine lace. Funky, juicy nose with citrus and dry tropical fruits, oak, a bit of butter, horse blanket. Tart flavor of green apple, grass, grapefruit zest. There is a nice underlying sweetness and a very bitter finish. Very good. Not their best of this type, but still great.

Bottle shared by Corbit, thanks! Pours a slightly cloudy burnt gold with a near white head that dissipates completely. Aroma has a light pepper with horse blanket and a bit of underlying sour fruit. Flavor has green pepper and cheese with backing tart fruit.

375mL bottle, sent from Glouglouburp (thanks a lot, Dany), pours a cloudy, opaque deep orangey amber with a small-ish beige head. Nose brings out the wine barrels on top, with wild yeast moderately apparent that might be more potent in a few months. Flavour brings out some moderate tartness, a fairly prominent wild yeast character even though this is a young brett beer, white wine barrels, and a dry finish of hops similar to Nelson Sauvin or some other NZ variant. So much depth to this, mixing the brettanomyces and white wine barrels to utter perfection, giving off only a mild tartness. This could be classified as either a wild ale or saison. Probably my favourite farmhouse ale by Hill Farmstead so far. Wonderful.

12oz (375ML) Bottle enjoyed in a tasting glass at room temperature on 11/14/12.
A - Cloudy muted orange appearance with a few "floaties" due to a vigorous pour. A mild 1 finger fluffy pillow-like white head that faded to a minor level of head that remained throughout the drink.
S - The best aroma from a beer I’ve ever encountered. The depth is remarkable. Overall, Brett dominates the nose. This barnyard irrefutable Brett aroma is unmistakable. It’s present and there to impress. Hints of lemon, oranges and white wine are present as well.
T - Tart from start to finish. Bready and Bretty throughout. Hints of grape skins, melon, cucumbers and sweet orange zest with a handful of grape skins. The tartness is so pleasurable and would be perfect on a hot summer day. It’s not sour..just tart. The very common taste of Shaun Hill’s Saisons is easy to detect. Like Arthur, Anna and their barrel aged versions of those two saisons, this beer is very close. Perhaps most similar to a "juicy" version of Flora? That’s probably the best way to describe it.
M - Medium body and carbonation. Exceptional balance and enjoyable now. i’d love to try this again in 6 months to see how it progresses.
O - Is it the best wild ale I’ve had from Shaun HIll? No. For tart characters and overall quality, I’d say Mimosa, Flora and Art take the cake. However, Juicy is unique. It stands on its own and it’s perfect in it’s own way. Is it like other HFS beers? Sort of. The terroir of the Hill Farmstead is strong in this one but it’s unique and you can’t assume it’s exactly like other barrel aged beers from this tiny brewery in Vermont. It’s a fantastic beer and one that I wish was available in 750ML bottles. 375 is just enough to make you beg for more.
