A deep mahogany, Belgian-style brown ale brewed with beet sugar, raisins and Belgian-style yeast.
We began brewing this one at our pub in 1996 (we began packaging and selling it sometime in 1998) as the answer to the question, "What beer should I enjoy with a wood-grilled steak?" Raison D'Etre fits the bill. It's as tasty and complex as a fine red wine.
In the Quick Sip Clip video, Sam talks about Raison D'Etre inside the new cellars for our 600-bbl fermentation tanks. The cellars were designed specifically to allow sterile yeast management. The system also allows us to automatically dose the yeast into the fermentation tanks. At Dogfish, we use multiple strains of yeast for our different beers, so we are acutely aware of all that can go wrong when you don't love and protect the yeast.

Bouteille 12oz. De couleur brune et voilée. Nez fruité (petits fruits confits, notes de prunes), de sucre brun, léger de levures épicées et de houblon floral aux notes herbeuses. Moyenne-ronde en bouche avec un pétillement moyen-doux ainsi qu’une texture moyennement crémeuse. Goût fruité (petits fruits confits, notes de prunes, traces de raisins vineux) avec un moyen-léger goût de levures épicées lors de l’entrée en bouche auquel se rajoute un moyen goût de sucre brun avec des notes de caramel puis en finale l’on retrouve une légère amertume de houblon herbeux aux notes florales avec un très léger goût d’alcool. Post-goût moyen, composé d’un résiduel de malt sucré avec un léger goût fruité ainsi que des notes amères de houblon et d’alcool. (2005)

From a 12 oz bottle at home. Pours a dark amber with a thin white head. Malty raisin nose. Dark cherry, brown sugar and mild citrus notes. Nice ale.

0.355l bottle shared with The Tasting Crew. This one pours a nice near-clear copper-red body, lots of microscopic particles floating around and a small quickly sidesticking head. On the aroma I get lots of sweet dried fruits, zesty concentrated honey melon, raisins and some caramel. It's average to softly carbonated and it has oily texture. Yeah, it's a bit on the sweet side with lot's of sticky raisins, candy sugar and caramel. Banana-sweetness also, and it feels a bit dry on the tongue. Some warming alcohol also going on here, with a fudge sweetness in the near watery finish. Tasted alright, but it never got to exciting. 25.07.2012

Big thanks to Boutip! Smells boozy with some oak barrel. You can smell the raisins but the brew actually doesn’t come out that sweet. Pours dark reddish orange with a little foam. Good medium carbonation level, some bitterness from the alcohol. Decent belgian strong that actually tastes a lot more conventional than the pro-experimental label would lead you to believe. I was expecting another wacky Dogfish beer, but this is just a pretty decent Belgian strong. Bottle.

Bottle sample, thanks zvikar, smallish head, clear deep red to brown colour, aroma of vanila essence, caramel, wood and a touch of dried fruits, flavour of burned sugar with some biscuit and a touch of barnyard. light bodied with a suprisingly strong and dominating alcohol. Quite simple and not too exciting.

(bottle) clear reddish amber colour with small tan head; aromas of stewed fruit, raisins; balanced flavour; reminds me of some british and scottish ales but not of any belgians

Aroma is sweet with malt and raisins. Flavour is also rather sweet with raisins, some metal, malt, caramel and hints of honey. Odd stuff, I find it hard to find any use for this kind of beer.

12 oz. bottle. Pours a dark copper color with a small, beige head. The aroma is dark fruits, bananas, raisins, molasses, tannins, and vanilla. The flavor is very sweet, with a faint bitterness and spiciness in the finish. The palate is medium to heavy, sticky and syrupy, and there is slight alcohol warming. Overall, this is a strong, malty and tasty beer, but not the best.

Deep red, mahogany color topped by a small bubly beige head. Complex roasted malt aroma redolent of dried figs, vanilla bean and raisins. Tangy, bittersweet roasted malt flavor leads to a yeasty, earthy malt/hop finish. A complex, flavorful brew that should be sought out.
