Hop Dam has been a long time in the works, and its design required us to build a large stainless steel hop dam for our kettle, just for this beer! It was worth all the effort, because this beer is extremely hoppy and very satisfying, using 50% more hops than our Mean Manalishi Double IPA, which was voted Best Double IPA In The World by the US Beer Tasting Championships. Hop Dam is 10% alcohol by volume, and really hoppy, with a bitterness level that is very high but refined and therefore refreshing – its like kissing a hop!! Along with all the standard hop additions, it is also mash-hopped, first-kettle-hopped, and dry-hopped!!! Hop Dam is a 100% American-style IPA, dominated by the top-rated, assertive and refined Amarillo hops, along with lots of aroma and flavor from Columbus, and Cascade, and the wonderful Summit hops – the very special dwarf hop plant picked by hand, and sought-after for its great flavor and aroma. These hops work great together, and make Hop Dam TRIPLE IPA our new standard for hoppy beers!! It will be available for only a few months, so get Hop Dam while it lasts!

Bottle. Deep golden colour with an off-white head. Aroma is peaches, pine, orange, citrus, grapefruit. Flavour is peaches, pine, orange, citrus, grapefruit. Powerful . Nice hoppy beer.

Odense spring time specialties night at Dolle. Amber with floating hop particles. Small white head. Grassy-herbal hop aroma with a fruity hint. Sweet, almost sugary, with lots of grassy hops, and an aggressive bitterness. It’s extreme alright, but unpleasant, too sweet, too bitter and too grassy.

Bottle @ Odense Late March Tasting, 2012. Pours cloudy golden with a small white head. Nose is sweet malts, citrus hops and caramel. Medium bodied. Citrussy and dild, herbs. Rough and unrefined.

Aroma: Caramel and pine resin
Taste: Pine resin, bitter citrus and tea
Very nice. As it warmed up the finish had a ice tea flavor that was enjoyable

22oz bottle poured into a snifter. Pours a dark orange with about half a finger of off-white head. Aroma of citrus, pine, and caramel. Taste is heavily bitter and very lightly sweet. Same as aroma. Full bodied with a thick and creamy texture. Lively carbonation and a long bitter finish. Overall, I really like this beer. I would love to try it when it’s fresh rather than almost a year old.

This pours a hazy dark orange with a small white head. One of the best aromas I’ve smelled in an IPA in a long time. Well balanced with pine, some citrus and a juicy candy malt. The flavor is bitter from the first sip all the way to the finish and beyond. Complex hop bitterness that changes during it’s duration. Only the 16.99 price for a bomber will keep me from drinking lots of this.

(Bottle, 0.65 l, at Pikkulintu, 20111020) The beer pooured deep copper coloured and clear. Its head was medium sized and white. Aroma had sweetness, malts, hops and saltiness. Palate was medium bodied and burning with medium carbonation. Flavours were hops, sweetness, more hops, pine, malts and bitterness. Aftertaste was boozy, hoppy and bitter. The burning feeling on my tongue lasted too long and the beer was too sweet. Hop flavours were ok.

A bottle sample at Craft Beer thanks to the ever generous Tom Cadden. Cheers Tom! Clear amber beer, little white head. Light semi dry palate. Rich deep hops - marmalade and pine. Some tropical fruits. Builds to quite a bitter finish. Good rich IPA.
