Once we pick fresh hops, the clock starts ticking. Each year, we visit the Pacific Northwest to hand-select the best Cascade and Centennial hops, race the harvest home, and brew immediately to capture citrus, pine, and floral notes at their absolute peak — aromas and flavors for the perfect winter beer. It’s a magical time at the brewery — has been for 40 years now! — when our brewers huddle around the fermentation tanks, toasting the start of a special season with a holiday beer in hand. It had been a few years since I had properly had this one. Bought a 12 pack and shared them over New Years Eve. Copper color, small off-white head. Just about how I remember it. Aroma was a bit spicier than I recall, more peppery, bigger caramel than I recall. Alcohol punches you a bit, it's there, not hidden at all and you get all 6-7% right there. Caramel, peppery, some resin.

12oz can. Light amber pour yields a rocky off-white head and streaks of lacing. Malty aroma with notes of pine, hoppy. Taste is malty, leather, toffee with a strong astringent hops flavor .

Loose off white head on an unclear dull copper coloured body.
Spicy malt aroma.
Medium bodied, foamy with a dry back
Malt, caramel, biscuit, spiced & floral tastes with a bitter finish.
Good one.

Pours a fairly dark copperamber, medium sized, stable near-white head. Scent is mild, crisp caramel maltyness, fairly mild on the hops though. Taste is full, bitter, crisp malty base (caramelly crystal malts) . Hoparoma is mild. Medium bitter finish of medium length. Very decent, easy going. nothing spectacular, but balanced and enjoyable.

Can at home picked up from HOTM. A deep reddy amber coloured pour with a lively rocky beige frothy head. Aroma is singed pine, biscuit, liquorice, green hop, sap. Flavour is composed of aggressively bitter piney, sap ,resin, . Harsh bitter, resinous pine, sap, tar, biscuit, liquorice, Palate is semi sweer, resinous sticky hop ,moderate carbonation. Not bad.

Both amazed this isn't reviewed, and startled about how long it must be since I had one of these venerable classics. Nose is pine, light floral, with a base sweet fruitiness; very balanced. Taste is pine, with malt, leading to a pithy grapefruit and resin with a grapefruit finish. A balanced classic.

Sample at Palace Hall 13/12/2025 Malmö December tasting - sweet and toasted malts, marmalade shred, pine needles, caramel, nice hoppy and malty finish. Good stuff.
