Dernière volonté (French for "Last Will") is a mix of Belgian and English brewing traditions. Complex flavours of hop flowers and spicy, fruity esters from our belgian yeast are perfectly balanced with the robust flavours and aromas of malt. The finish is commandeered by an assertive aroma from dry-hopping.

A hazy orange beer with a small white head. The aroma is malty with slight notes of smoke as well as wheat, while the flavor is sweet spicy with coriander standing out, but also with a clear wheat presence, leading to a dry end.

Cloudy golden. Big phenols are plasticy but somehow good. Pear, alcohol, white pepper, complex fruits and peach. Good body, nice subtle hoppiness. Stylish, interesting brew.

Medium golden color, soft hoppy nose. The body is mildly rich and very soft with golden apples that is relatively sweet. The finish is rich and bitter.

On draught at the brewpub 6/2/2005 with Tiggmtl, Muzzlehatch and Bret Kuhnhenn and Co. Pale golden-yellow colored beer, small white head with good retention and low lacing. Looks rather still in the glass for a Belgian ale, however. Aroma of light pale malts, some dry biscuits and touches of lemon and orange rind. Fresh green hops greet the nose immediately backed by a brace of white sugar. Some faint touches of yeast, but it’s passing. Flavor is sweet, light grassy/plant-like bitterness, with dough and sugar, and a round, but too subtle/subdued Belgian yeast. Dry spiciness gets almost bready on the end. Mouthfeel is soft, almost buttery/creamy, with moderate carbonation, and a medium body overall. Would like more Belgian yeast apparency and complexity and some dryer/more complex malts.

Blonde beer with a rather floral hops aroma, almost pot-like. Extreme hops with slices of grapefruits and resins with a nice scotch like aftertaste, like a wonderful liqueur with hops.
