Oude Geuze Boon is one of the finest examples of the traditional 100% spontaneous fermentation Lambic style. To moderate the sourness, Boon Brewery only brews Lambic in the 7 cold months, from early October until April, according to the traditional "turbid mash" system. This Lambic beer is aged for 1, 2 or 3 years in oak casks. The blend, a mild average 18 months old Lambic (unsweetened, unfiltered, unpasteurised) is refermented in the bottle and can be stored up to 20 years. Brewed in Lembeek, the village that gave Lambic its name. Awards at the World Beer Championships: 2008 Gold, 2010 Silver, 2012 Gold Medal.

2022 - 2023 250 ml klasicky uzaver. barva zlatava zakalena s plovoucim bordelem. Vune kvasnice, jabka. Chut kysela, konec suchy jako jablecna dren. Neumim popsat. Moc dobry lambic.

A small bottle from the off-licence opposite Jing Mei fire station. Aroma: funky lawn clippings. Appearance: opaque dark honey, big creamy off-white head, dissipating to 2-3mm. Palate: medium-bodied and tart, average carbonation; finishes with a funky afterburn at the back of the mouth. Taste: not especially sour, heavy, dank, good stuff.

Perhaps not the correct listing, will transfer at a later date - possibly 2023-24 batch chalked up at 6.5%. Lambic style very evident, with the outside fermenting doing a fine job here. Almost champagne levels of taste.

Old rating - 375ml bottle from 2016-2017 season, brought from Waitrose in Jersey. Pours amber with a white foamy head. Aromas & tastes of apples, gooseberries & Brett yeast. Medium body. Slightly dry sour finish. Highly enjoyable

Pite w barze smak kwaśny z nutą stęchlizny i aromatem dzikim. Złote biała piana lekko szarawa Nagazowanie średnie nie jest zbyt musujące, lekka treściwość, ostra kwaskowość. Ogólnie piwo jest przedstawicielem stylu, od czasu do czasu można się napić, ale na codzień nie dla mnie.

bottle at Le Cheval Blanc
Golden pour with a very frothy white head. Aroma of wet hay, wet grass, and some very tart citrus. Not the best lambic i’ve had, but still very good. the tartness is a little muddled, and could be a little more upfront. Maybe its an old bottle and its mellowing. Still nice, but i prefer more funk.
