Ale Refermented with "Spent" Blueberries
Demi-Tone (blueberries) follows in our lineup of refermentations with spent fruit, which includes La Vie en Rose (raspberries), Detritivore (cherries), and Grim Harvest (blackberries). The result of refermenting on spent fruit is a more subtle fruit character and arguably more complexity in terms of the fermentation profile.
We’ve always been a little cautious when working with blueberries, as we’ve encountered acetic (vinegary) issues in the past, which we’ve always dumped down the drain. Some may recall our Blueberry FAIL of 2014, which resulted in a beer with some very harsh, sharp acidity. We’ve come a long way since our first attempt of working with blueberries, and we believe Demi-Tone is a really great expression of one of our core philosophies — allowing native yeast and bacteria to create interesting flavors and aromas through the fermentation of grains and fruit.
Demi-Tone was made by taking a young (1-2 month old) farmhouse ale brewed with well water, malted barley, malted wheat, oats, and hops, and refermenting it with the spent (or leftover) blueberries from Jester King Colour Five. It is unfiltered, unpasteurized, and 100% naturally conditioned. Demi-Tone is 6.3% alcohol by volume, 11 IBU, 3.6 pH, and has a finishing gravity of 1.001 (0.25 Plato). It was packaged on March 7th, 2017. It is our first ever batch.

Keg at indy man beer con. Session 1. An attractive plum red orange coloured pour with a fine pink head. Aroma is lacto, sour plum, cherry, airy woody cherry.. Flavour is composed of tart cherry. Airy tart fruit, cherry, blackberry light lacto. Palate is semi dry airy, highish prickly carbonation. Really nice.

Keg at IMBC 2018, session 1. Pours clear pink-red with a creamy, off-white head. Nicely rounded, soft woody dryness, aged berries, a little salt, cherry seeds, moderate acidity. Medium bodied with light carbonation. Clean finish, nice berry tartness, quenching acidity. Solid.

Draft @ Gist. Ambre voire cuivre sur un col fin crémeux blanc-cassé. Arôme offre un bouquet léger en grains sur un rétro plaisant de myrtilles. Retrouve des effluves classiques de funk Jester King avec un excellent ajout de fruits fermentés. Cet usage de fruits déjà utilisés en second run renforce un peu le côté pulpe et doux-corcé. Palais est plaisant entre grains et léger côté biscuité voire de drêche. Petite note citrique avec effet de grains en retrait, léger et bien fruité sur un bon fruité de myrtilles le tout restant cependant sur un effet grillé malté modéré qui vient bien balancer le tout.

Draught @ Gist, Brussels. Smooth, slightly funky and farmyardy with some earthiness, tart blueberries and very mild sourness. Some wood, oak and juicy notes. Pretty smooth and balanced.

Draft. A- Blueberry, citric acid. A- Red color, hazy liquid, white head. T- Blueberry, tart, mild funk. P- Light body, average texture, average carbonation, balanced finish. O- Pretty refreshing. Lots of blueberry but not too sweet. A little funk that balances out the fruit. Solid beer.

On tap at Jester King. Pours a hazy dark purple with medium pinkish white head leaving spotty lacing. The aroma is blueberry, cherry, oak, funk, oat. Medium body, funk, berry, oak, nice tartness, very nice.
