6th Feb 2015: large sample from a 0.75 litre bottle. Amber/brown pour with an off-white topping. Sweet malty molasses rule the nose and taste, with some woody notes behind the caramel like aroma and flavours. Hints of fruitiness try and push through the sweetness but do not impose themselves too well. Not unpleasant, just a bit on the sweet side: even for my sweet tooth.

Bouteille 75cl. Troisième version de ce scotch en barrique, et d’après moi, la moins réussie. De couleur ambrée, foncée, col fin blanc-cassé. Arôme offre ce bouquet typique de Cognac aux saveurs de pomme caramélisée avec un petit rappel de winter-cake aux épices et d’un léger fruité noir. On perd ici une grande partie du profile de la version de base qui est pourtant une des meilleurs bières de cette brasserie. Palais, une bière dont le s11% se ressentent et ne jouent pas forcément au développement d’un profil attendu d’un scotch ale. On retrouve, certes, le côté pomme caramélisé et résiduel du Cognac mais sans les grandes lignes de la Scotch Silly originale et pourtant si complexe. Je note un léger résiduel boisé de chêne avec un accompagnement malté caramel, léger chocolaté et un fini amer modéré. Pointe de grillé avec un côté pâle et fruité noir- date. On se demande d’ailleurs comment cette mise en barrique à ajouter 2% aux 9% de base, chose que les deux versions antérieures ne présentaient pas - cela expliquant peut-être pourquoi le profil Cognac domine trop la bière et dénaturalise le côté Scotch. Encore des découvertes dont même le bistro du coin de la brasserie n’est pas au courant. Franchement, faut arrêter de se foutre des gens et de faire des bières juste à destination Outre-Atlantique.

Clear amber colour, white head. Aroma of caramel, wood, red fruits, banana. Malty flavour, wood, light hint of apple. Finish wood, yeast, sweet malts, caramel.

Bottle @ ZZT XI. Clear dark amber color, average sized off-white to beige head. Smell and taste malts, a hint of dried fruits, lightly wood, lightly alcohol, a bit earthy. Medium body and carbonation.

Bottle @ ZZT11. Clear copper colour with a small off-white head. Smells sweet, scotch ale, malts. Tastes herbs, banana, sweet. Medium body, soft carbo.

Tasted from shared bottle. Spritzy, some apple. Cognac is in there, but is very light. On the dry side, and a surprisingly light palate. Lots of bubbles on the palate.

750 ml bottle. Pours a dark reddish brown with moderate head. Aromas of brown sugar, sweet malts, and dark raisins, Conflicting Flavors of raisins, bitter citrus peel, toasted malts and copper. Bitter dry finish. Odd.

Bottle, 75cl corked. An unclear dark brown beer with a small, diminshing beige head. The aroma is on the dried fruits side, some diacetyl notes and brown sugar chiming in. Yeast hints, booze, baked apples, a generic apple touch, raisins and sulphur. The flavor have dried fruits, prunes and raisins mostly, some brown sugar and booze, a touch of baked apples and some diacetyl. It’s full-bodied, warming and with a nice carbonation level. Lasting finish with baked apples, dried fruits and yeast. Overall, too yeasty, but it’s tasteful and pleasant anyway. 150131
