This bright and pungent Saison is brewed with malted and raw wheat and local wildflower honey from our friends at Fruitwood Orchards in New Jersey. Primarily fermented in stainless with our Magickal Saison yeast before being transferred for conditioning in a large French oak fourdre atop our house mixed culture. TONS of honey in this batch! 6.5% Notes of ripe pineapple, white pepper, beeswax, Juicy Fruit, and dry Riesling.

750 ml corked and capped bottle from Ardmore Fermenteria. Batch 12, bottled on 01/10/2023. Honey gold pour. Pillowy white head. Great lacing. Earthy malt aroma has yeasty notes. Flavor is soft, bready malt with a hint of sweetness and farmhouse funk. A bit of green apple, honey and oak. Some dryness on backend. Well crafted and extremely enjoyable.

Bottle @ Welcome to the jungle-share thanks to bursprak! Pours clear golden with a small white head. Aromas of citrus, honey, mango, sweet oak, esters, peach. Taste is tart, sweet oaky, vanilla, peach, subtle chlorine, lemon juice, pear, white grapey.

Taster pour from bottle at bottle share -- thanks Cara and Tom! Appearance is lightly hazy yellow-gold with decent sparkle, light ring of off-white head. Aroma is tart fruit dominant over citrus. Taste is dominant tart fruit. Mouthfeel is light-to-medium bodied with frothy texture, soft carbonation and finish as taste. Overall, a bit more tart than I'd prefer, but well made.

Cara and Tom on the bottle share. Purchased at the general store. Aroma has mild homey, citrus fruits, mild fruit. Flavor follows with honey and a mild tartness for oak and yeast. Good oak character. Real good.

Poured from bottle Tom/Cara light hazy straw with a white head. Aroma is funk, light citrus, Brett. Taste is floral, funky, citrus, tart. Nice balance.

Tasting at Brian's
Hazy pale blond colour. Nice aroma, funky, earthy, manure, floral. Dry mouthfeel, quite strong acidity, it has a good blend of yeast spices, funk, lemon rind; mild astringency in the finish, lactic acid too.
Excellent.

Bottle - Soured lemon peel notes. Cloudy yellow gold with a decent white head. Light soured lemon, touch of herbal notes and a light finish.

Hazy blonde, not much head. On the nose this has a decent brett C nose, some orangey notes,. On the palate, there's some dryness, dusty yeast, brett, citrus, and a fairly woody French oak finish. Just a touch of sweetness. This is really good.
