This barrel aged dry cyser (’size-er’: a honey wine made with apples) was made with fresh-pressed Michigan apple cider and aromatic Michigan wildflower honey. Fermented to dryness and aged in charred American oak barrels. Huge apple aroma is complimented by the flavor of honey and oak with a warm smooth finish.

Bottle at the World Beer Festival - Columbia on 01/22/2011. Clear pale golden body with no head. Sweet honey and vanilla aroma. Vanilla and acidic fruit flavor with a honey finish. Medium full body with no carbonation.

375 mL bottle. Pours a clear pale yellow color. Aroma of apple, pear, honey, wood, berries. The taste is peppery wood, honey, vanilla, apples. Medium bodied, faint booze. Decent.

2012 Colorado Mead Tasting at Armin’s house. Pours a clear, light yellow appearance with no head. Just a touch spicy, lightly woody, red apple, spicy honey aroma. Tangy, dry woody, chewy apple, light lemon, herbal honey flavor. Pretty tasty brew.

Bottle courtesy of Sebletitje. Pours clear very pale golden with no head. Smell is very sweet with ripe apples, honey, lemon zest, vanilla, wood, alcohol and hints of cinnamon and cardamom. Taste is sweet and slightly sour with green apples, honey, lemon juice, wood, green grapes, smoke, vanilla and hints of grass and yeast. Mouthfeel is slightly dry, tiny tart and medium bodied. 37.5 cl bottle consumed on May 4, 2012. Thanks to sebletitje!Clear yellow color, no head. Honey, dough, alcohol scent, apple, white wine and spicy. Dry, white wine, honey, spicy, saffron, alcohol, apple, tart taste. Smooth mouthfeel, tart dry bitterness. Dry white wine and honey aftertaste.Reminds me of apple wine, or white wine of some sort, more than a traditional dry mead I’m used to. Not bad though.

Bottle. Pours a clear pale gold with no head whatsoever. Aroma has light tart apple, a bit of honey and oak with a bit of bourbon and a white wine. Flavor begins with tart apple and white wine, but finishes with sweet apple, honey and a hint of bourbon.

375 mL bottle. Pours straw yellow with sparse fine particles and a very few bubbles on the surface of the glass. Musty smell, oak, apple, maybe chemical smell in the must. Flavor leads with apple and white grape, must and oak, honey and white bread. Dry, with some tartness and tannins. Not bad here, and it’s good to know I can get some enjoyment out of a dry mead.

Pours clear yellow. Nose of McIntosh apple, honey, oak and vanilla. Taste is mostly oak - overpowering all other flavors. Some honey, apple and hint of vanilla. I much prefer the other cyser. Medium body.

Bottle courtesy mlunger12: Poured a clear with no head. Aroma is oak and faint apple. Taste is dry almost wine like with apple and oak glow.

De couleur dorée très claire laissant un fin filament huileux sur le verre. Arôme a de subtiles notes de tonneau et de chêne, au nez, je note la pomme ainsi que la pelure de pomme qui donnent cet aspect unique. Le miel et fleurs des champs donnent à l’hydromel ce cote de cire naturel. En bouche, l’hydromel est comme décrit, sec avec la pomme qui donne un ton aigre et acide en bouche qui se mélange bien avec le chêne et une fine note de vanille.
