Sour wit ale brewed with spices and aged in an oak foeder
Tart -- Witty -- Collaboration
This tart, witty release kicks off our Foeders with Friends collaboration series. Our good friends at Jester King came to town to brew a sour wit ale with spices to christen one of our new-to-us foeders at Bruery Terreux. We designed a recipe with bitter orange peel and coriander and set it to ferment and age with our mixed house culture and Bavarian wit yeast in the designated foeder for four months. Using the Jester King house culture for bottle conditioning, Bouffon features some of the classic notes you’d look for in a wit, including banana, pear, vanilla, bubblegum, white pepper, lemon and a signature yeast profile. It also shines with the wild character from its cultures and collaborators at Jester King and Bruery Terreux.

Bottle to tulip.
Appearance: glossy golden yellow color with a one and a half fingers of white foamy head which dissipated at a nice pace to leave some light lace
Aroma: crushed coriander, funky, grassy hops, lemon, orange peel, bubblegum, white pear, white pepper, tart qualities, bananas and a light sweet woody vibe underneath
Flavor: blends all those prior noted aromas to a fine sweet to tart to funky and sour character; finishes funky, lemony, white pear and banana-ish
Texture: medium bodied, good as a sipper, the tart and sour vibes seem a bit stifled to the funky and sweet portions which tells me this is absolutely balanced practically perfect.
Overall: just wondering if "Bouffon" means the kitchen sink, if not, maybe it might mean "the whole book" as they really threw the whole book of ingredients at me in this beer. Yes, I would have this again.

Taster showing pale gold with a finger of clean white foam. The nose shows moderately intense notes of apricots and peaches. The palate is well carbonated and medium bodied. Moderately tart with light notes of apricot.

Flaska från Beergium drucken med ölföreningen. En snygg krispig wit utan så mycket kryddor eller wit-karaktär med smak av jäst, citrus, svaga toner av koriander, jämna och fina aromer, rund och len, lätt sytma, fin syrlighet med snygga lite funkiga toner från bakterierna i faten. Gott!
