Tart -- Witty -- Collaboration

This tart, witty release kicks off our Foeders with Friends collaboration series. Our good friends at Jester King came to town to brew a sour wit ale with spices to christen one of our new-to-us foeders at Bruery Terreux. We designed a recipe with bitter orange peel and coriander and set it to ferment and age with our mixed house culture and Bavarian wit yeast in the designated foeder for four months. Using the Jester King house culture for bottle conditioning, Bouffon features some of the classic notes you’d look for in a wit, including banana, pear, vanilla, bubblegum, white pepper, lemon and a signature yeast profile. It also shines with the wild character from its cultures and collaborators at Jester King and Bruery Terreux.

Bottle sample at a tasting at Yaron's place. Cloudy yellow. Funk, oak, cobwebs, some spiciness, fruitiness, sourish, some citrus. Good.

Bottle. Pours a golden hue with a large white head. A big sour berry nose. Oak, lactic sourness, sharp fruit, berries, some softer perfume. Quite nice.

Golden color. Oak, orange peel, light clean nose. Light medium tartness, super low carbonation, orange peel, but not that great

Taster showing pale gold with a finger of clean white foam. The nose shows moderately intense notes of apricots and peaches. The palate is well carbonated and medium bodied. Moderately tart with light notes of apricot.

Bottle at tasting. Aroma of funk, dry tart, citrus, wheat and some orange . Taste has dry funk, mild acidic sourness, orange, tart wheat and oak. Nice.

21-02-19 // on tap at Monterey Bar Berlin. Sourish witbier. Definitely has the light wheat malty body. Mild funk, good acidity.

750ml bottle. Pours nearly clear gold yellow. Lemon, sour apple, pear, wood, lots of farmyard funk, clean white wine vinegar, lime zest. Fizzy body but not thin. Very good.

Flaska från Beergium drucken med ölföreningen. En snygg krispig wit utan så mycket kryddor eller wit-karaktär med smak av jäst, citrus, svaga toner av koriander, jämna och fina aromer, rund och len, lätt sytma, fin syrlighet med snygga lite funkiga toner från bakterierna i faten. Gott!

Draught at BeerGeek Bar. Clear, gold colored. AROMA- wild, leather, hay, herbal, close to lambic. FLAVOR- dry, moderately sour, herbal, floral, spicy, wild. Medium bodied.
Nice clean wild ale.
