Brewed with Toppling Goliath from Decorah, Iowa we decided to combine our Imperial Stout recipes and showcase one additional ingredient from one specific region. After an extensive boil this monster was the highest gravity wort we have produced out of our brewhouse. The result was a sweeter full blown Pastry Stout. After fermentation we decided to showcase Mexican vanilla beans from the Vera Cruz region. These beans lend sort of a creamy marshmallow flavor to the beer having us think of the chocolate crémeux dessert.

Pours black, medium small, fairly dark tanned head. Scent is roasty, bit sharp, coffee, very pure chocolate (bitter kind) bit soy, burnt malts. Taste is full, silky, fairly sweet - but not over the top. Very roasty, bit burnt even. Vanilla expression is medium loud, but not the best kind of vanilla (to my taste). Silky body , medium carbo - which is relatively high concidering the style, but definately not too high. Surprisingly average, I expected to be mindblown from these people collaborating on their strong-suit style. Still, a nice beer, but not on par with expectations.

Bottle thanks to Denny. Pours a dark brown with small tan head that lasts. The aroma is strong vanilla bean, licorice, roast. Slick body sweet roast, vanilla, cocoa, light boozy finish, enjoyed this.
