My goal was to craft an ale of extreme balance with a delicate complexity that allows for contemplation while also providing quaffable refreshment. starting with a base of German wheat & pale malts this crisp slightly hazy foundation was then accented with a blend of Sterling & Citra hops providing a intricate blend of herbal grass & tangerine citrus flavors and aroma. to pull this all together and to complete the ’cleansing’ aspect of my vision i gently finished the ale off with a touch of white sage, lending a mild earthy spice character to the blend. of course let’s not forget our house saison yeast that brought all the elements together leaving a dry yet intricate finish.

Sampled at the Funky 8 - Brooklyn, NYC. Pours cloudy yellow with a slight, white foam head. Super herbal, very sweet. Some orange and other citrus. Yeast, white bread. Medium bodied with fine to average carbonation. Bready wheat to finish, some sugars, yeast, spices. Not bad. (Score: 3.6)
Draft at CBC 2013 - Copenhagen. Pours hazy matte gold with a fine creamy white head. Lots of herbs in the nose - sage, thyme - some dry dough, too. Light-medium sweet flavor with doughy white bread, dried herbs, light bitterness, hay. Light to medium bodied with average carbonation. Clean finish, lightly drying, with sweet pale bread, great balance with the herbs, background yeast, dough. Great stuff. Very drinkable. (May 2013, score: 4.0)

Bottle. Pours a cloudy orange white with large creamy white head that lasts awhile. The aroma is citrus and sage. Thin mouthfeel with citrus flavor and herb. Good.

Tap @Ratebeer event. Pours cloudy yellow with a small white head and some lacing. Aroma is herbal, peppery, hay, biscuit, touch of banana perhaps. Flavor is the same, very herbal, a bit of citrus. Lightly sweet, zesty lemon-peel bitterness on the finish. Interestingly, from the bottle it is hazy to clear and closer to amber than yellow. Otherwise my impression is about the same as previous.

750ml bottle. Hazy golden colour with average, frothy, half-way lasting, minimally lacing, white head. Fruity and minimally spicy aroma has notes of orange, citrus, hints of grapefruit. Taste is dry and fruity, minimally yeasty, hints of orange, a slightly herbal touch. Nicely balanced, unspectacular.

Slightly hazed, yellow gold with a short, white head. Aroma is lemon/orange and wheat. Taste is the same...a nice mixed citrus... slightly spiced, orange-juice-pulp...pepper. Very natural.... Delicious.

Bottle via trade with a savage BA. Hazy effervescent bright straw body, thick tight off-white head. Floral, bready nose, spicy with notes of sage. Bready body, spicy with herbs, pepper, and flower petals. Very bready/estery. Tasty.

Tap at Brasserie V. Thick unfiltered golden-orange. Steady white head. Minty sage aroma, quite herbal. A creative Saison certianly, kind of bridges the gap between a good Belgian Saison and a US spice bomb. A really nice, lively mouthfeel, the spices are bold but not overwhelming. Creamy sage-mint aftertaste. Lemon-lime creaminess. This is a solid offering, going out on a limb a little and succeeding. Some balancing tangerine tones, some barnyard action as well. Well executed, perfect effervescent body. Citrus tones come out as it mellows.
