We decided on something like a Berliner Weisse, a German-style sour beer infected with lactic acid bacteria and often flavoured with fruit. We opted to control the way the bacteria entered the wort and had them sour it for 48 hours. This turned out extremely well, creating a funky, fresh, sour taste with, amongst others, hints of rhubarb. The wort was then boiled again but, unlike usual, we used no hops at all. Towards the end of fermentation, we added about a 100 kilos of raspberries as well as few black berries. Besides its fruity tones, this gives the Himbeer its beautiful, bright pink colour.

On tap at In De Buurt, Zwolle. Aroma of fresh raspberries, hint of wheat, tart red berries. Flavour is light sweet and medium sour. Well balanced, very refreshing. Very enjoyable.

Tap @ Borefts Beer Festival 2015. Pours hazy pale blood red with a big white head. Aromas of jammy raspberries, lactic tart, some citrus. Taste is lactic, light citrussy and floral notes, jammy raspberries.

Tap @ 1st Anniversary Kaapse Brouwers Festival. Pink color. Raspberry and apple in the aroma and flavor. Thin, watery. Soft sweet and sour flavor. Well balanced, not too sweet.

Borefts Beer Festival 7th edition day 1 25/09/2016. A nice pink /orange coloured pour with a light pink frothy head. Aroma is floral, raspberry, ponnegranite, yogurt. Flavour is composed of super dry, puckering, tanfy tart fruit, nice raspberry and blackberry fruits. Palate is uber dry, powdery dry finish, high carbonation.

Draft. Hazy to cloudy reddish amber color, white head. Aroma of overripe berries. Taste is lightly tart berries and lemon. Tasty.

0.15 l on tap at ’Arendsnest’ during Carnivale Brettanomyces 2016. Hazy, orangeish red with a large, almost creamy, white head. Sourish-fruity, slightly sweetish aroma of lots of raspberries, rose hip and hibiscus. Quite sour, very fruity and a little sweetish taste of lots of raspberries, rose hip, hibiscus and a touch of rhubarb, followed by a short, rather tart, slightly minerally finish. Thin to medium body, astringent and quite effervescent mouthfeel, average carbonation. Really nice, but could not drink that much of it.

Collab of ’t IJ with Oedipus, from tap during Carnivale Brettanomyces. Moussy, bubbly, slowly dissipating, off-pinkish head, misty amberish hued ’dirty’ pink robe. Aroma of indeed red raspberry but also the typical ’dried tomato’ effect often seen in older raspberry beers, sour yoghurt, blood orange, rosehip tea, cranberry sauce, cream. Fruity, estery onset, crisp, lots of raspberry indeed, also hints of redcurrant, cherry tomato and cranberry, yoghurty lactic acidity, drying, soapy wheat in the background, tart ending. Lovely sour fruit beer from two well-established breweries joining forces.

[ As ’t IJ / Oedipus Himbeer ].Unclear - hazy matt medium amber red color with a average, frothy, good lacing, mostly lasting, off-white to white head. Aroma is moderate malty, wheat, moderate yeasty, yeast, raspberries, dought notes. Flavor is moderate sweet with a average duration, thin, wheat, raspberry. Body is medium, texture is oily to watery, carbonation is soft. [20150927]

I think I found the right beer, but I’m going by old notes and I seem to have written down deScriptive words instead of the name of the beer as I wrote "I.S.M. Oedipus Lichtzuur Frambozenbier, 4.5%" with "I.S.M." before that. I think I.S.M. is "In Samenwerking Met"... in association with. So... tap - This was a hazy pinkish orange brew with a strong raspberry smells. It tastes sweet with mild tartness and plenty of raspberries. Light to medium bodied. Quite tasty.
