Eataly, NYC cask ($10): Pours golden with a white head. Aroma is hops and a load of thyme. The taste is where you really notice the thyme in full force. At first the beer’s bitter hoppiness is what you notice, but around the finish it starts to get more and more herbal. This is interesting for sure, and it is not exactly a bad combination, but I was still a little underwhelmed, especially for the quite steep price (I get it, you got prime real estate to brew beer, but still).

Brewed & on tap at Eataly Chicago, April 14. Poured on cask here, complete with Guinness-style sinking bubbles feeding a dense head. Hazy amber color notably different than a regular pale ale. Smell is a bit light, guess the tight head is not giving anything away. Taste has thyme right on the tongue in just the right proportion. Reminds me of a freshly-made spaghetti sauce; just no tomato. Mild cask mouthfeel is a bit thin. Both thyme and alcohol creep up on me as I go through the tulip. Luckily its dense flavor made me want to sip and savor slowly.

On tap @ Birreria, NY. Pours a bit cloudy amber with thin creamy white head, good lacing and average sparkling appearance. Aroma of heavy thyme, mild caramel, some citrus and grassy hops. Taste starts with light sweet malt, following is fresh herbal and fruity, while finish is moderate bitter. Medium body, slick texture and soft carbonation in palate. Aroma is fabulous, otherwise it lacks carbonation and is too bland...

A hazed amber ale with a thick nitro mocha head. In aroma, loads of thyme, resinous and intense, like a pizza topping. In mouth, a nice crisp biscuit malt with loads of thyme, grassy hops, well done. On tap at eataly Chicago.

Cask: A hazed amber ale with a thin lacing off white head. In aroma, a nice fruity ester malt with fragrant floral hops, thyme, very nice, smooth, and classy. In mouth, a nice herbaceous biscuit malt, with nice floral hops, thyme coming out well, if subdued, very well balanced. On tap at Birreria, Dec. 27 2011.

Cask at Bierreria at Eataly, 24/11/13. Hazed golden amber with a good sized white head. Nose is pizza topping, thyme, peach, bitter orange, toasted malts, grass, citrics. Taste comprises big herbal notes, bitter orange, thyme, spice, peach, toaste malts, apricot, straw. Medium bodied, soft carbonation, herbal bitterness in the finale. Ok for the style, something a little different but not one I could session on!

Nice creamy mediumlasting head. Aroma is slightly fruity spiced, light malts, thyme, yeast, hay, citrus, leafs, dough, hops. Taste is slightly dry grassy, light malts, hops, thyme, grass, leafs, citrus peel. Medium to longlasting bitterness, slightly dry mouthfeel. Fits perfectly with various food. This is actually the best food beer I’ve ever had. And honestly, I can’t remember ever having a beer that’s actually been better with food than without.

From tap. Pours hazy orange with a small white head. Thyme aroma. Sweet malty and light spiced. Bitter and dry finish. Less heavy on the thyme iin the flavour.

Tap on cask at birreria. Pours orangey yellow with floral and citric nose. Tastes of orange peel, herbaceous, thyme, malt, hops, and biscuits. Solid tasty brew.

Draught at the brewpub, on January 30, 2012Slight bit hazy, oily, yellow color, white head. Sweet, apricots, fruity, herbal, spicy scent. Sweet, herbal, fruity taste. Some alcohol, mainly herbal aftertaste. Smooth mouthfeel, medium high bitterness.
