Very good as an aperitif especially in summer. Ume is a Japanese plum which is much more sour than typical European plums. In Japan, Ume are eaten as pickles and not as fresh fruits. These Japanese plums can also be used to make Ume wine: the Umeshyu. The Ume choosen by Leo Imai for Ume Lambic are sourced from Wakayama prefecture – the best reputed region for Ume.

Bottle (from koht). Pours golden. Aroma is carrots, fruits, salted fish. Flavor is sour, fruits, salted fish, plums. Finish is sour. Overall: drinkable.

Bottle shared at Leightons place 18/01/2018. Many thanks! To Scopey. A light hazed golden orange coloured pour with a a fine white head. Aroma is musty, airy, grape, horsey funk, pineapple. Flavour is composed of grapey funk, airy, white grape, grapefruit skin. Palate is citric, grapefruit,, moderate, dry skin. Uber dry finish.. Lingering grapefruit bitter.

Bottle best before 2017-02, thanks vjohans. Pours heavy golden, no head. Aroma of cellar apples, cherries and barnyard. Sweet and smooth, very fruity for the age.

Bottle, Vintage 2016. Clear golden color with white head. Aroma is moldy basement, plums. Taste is moldy cellar, woody, plums. Dry finish, nice aftertaste, oily mouthfeel, doesn’t get chalky. The plum flesh character is nice, but it’s too dirty.

Bottle. Pours cloudy amber. Aroma is plums, mold, apple, light funk. Body is sour, salty, tart, quite oily. Short dry palate. An okay experiment.

Golden with little white head. Aroma is baked plum, lots of dust, citrus. Taste is slight salt, some dry dust. Very interesting but intensely mealy.

Pours straw with a medium sized white head, some lacing. Mild tart wheat, fruity. Wheat, cardboard and tart, dry

Bottle at RBSG. Pours a hazy gold with medium white head that diminishes quickly. The aroma is plum skin, funk, cheese, oak. Thin body, similar flavors to nose, light tartness, very good.
